Tokachi 8" Damascus Steel Gyuto/Chef Knife 牛刀
The Tokachi トカㇷ゚チ Damascus Series by Shimeru showcases the perfect balance of striking design and professional performance. This 8" gyuto chef knife is engineered for chefs and passionate home cooks who demand precision, durability and modern elegance.
67-Layer VG10 Damascus Steel
At the core lies premium Japanese VG10 steel, clad in 33 layers of Damascus on each side to create 67 layers of exceptional strength and resilience. Hardened to HRC 62, the blade retains a razor-sharp 15° edge for superior cutting power, far keener than the typical 20–25° of most Western knives. From fine vegetable work to carving meats and fish, every cut feels clean and effortless.
Carbon Fibre Jet-Black Handle
The handle is crafted from sleek carbon fibre in a deep jet-black finish. Lightweight yet exceptionally strong, it provides a modern, high-performance grip that is waterproof, antibacterial, heat-resistant and non-slip. The new oval profile sits comfortably in the hand, ensuring a secure and fatigue-free hold even during long prep sessions.
Precision and Lasting Craftsmanship
Carefully balanced and expertly forged, the Tokachi 8" Damascus Steel Gyuto/Chef Knife delivers both beauty and functionality. Its stunning ripple pattern captures the artistry of traditional Japanese metallurgy while offering the sharpness and reliability demanded by today’s kitchens.
With the Tokachi Gyuto in hand, every slice becomes an experience of precision and control, transforming everyday cooking into a professional-level performance.
Crafted from professional-grade, heat-treated high-carbon steel, Shimeru Knives deliver exceptional sharpness, durability, and edge retention. From the first slice, you’ll experience the precision that sets us apart.

Shimeru Knives feature uniquely designed handles that not only add a sophisticated touch to your kitchen but also provide a comfortable, secure grip for effortless chopping and slicing.

Step 1 — Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher — the harsh detergents and jostling will damage the edge and handle.
Step 2 — Dry
Towel dry immediately. Don't leave it wet or in the sink — even stainless steel can develop spots if left damp.
Step 3 — Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer — it dulls the edge and is a safety hazard.
That's it — no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Good quality knife, does the job well. I wish it came in a 10 inch version because I prefer longer blades for slicing, but the 8 inch is fine for most tasks. The edge retention is good, no issues after a few weeks of daily use. Slightly heavier than my old knife but that gives it a nice heft. Solid buy.
Really nice knife overall and I'm happy with the purchase. The blade is sharp and cuts well, the Damascus pattern is lovely. My only minor gripe is the handle shape took a bit of getting used to – it's a bit more rounded than I prefer but I've adapted now. Would still recommend it to anyone looking for a decent chef knife.
Brilliant knife, exactly what I needed. I do a lot of prep work for meal preps and this thing flies through carrots, peppers, everything. The VG10 steel seems legit, holds its edge way longer than my old Victorinox. Only had it a few weeks but zero complaints so far.
It's a decent knife for the money but I wasn't blown away if I'm honest. The blade is sharp enough but I expected a bit more from VG10 steel, seems to dull slightly quicker than I thought it would. Looks nice though. Probably fine for a casual cook but if you're used to proper Japanese knives you might want to spend more.
Got this for my partner as a surprise and he's over the moon. Says it's the best knife he's ever used. He's been doing all the cooking just to use it! The balance is spot on, feels really professional for the price. Came in a nice box too which was a bonus.
Honestly, this knife is a beast. I've been using it for about a month now and it's still razor sharp out the box. Cuts through tomatoes like butter, no squishing. The Damascus pattern is stunning too, proper head-turner in the kitchen. My old knives feel like toys now.
So I've been using this gyuto for about three weeks now and I'm genuinely impressed. The Damascus finish is beautiful and the blade is incredibly sharp out the box. I've used it to break down a whole chicken and it made quick work of joints. The handle feels nice and grippy too, no slipping even when my hands are a bit wet. Great value for the money.
Bought this to replace my old santoku and wow what a difference. The 15 degree edge makes slicing so effortless, no more crushing herbs or struggling with onions. It's a bit lighter than I expected but that's actually perfect for my small hands. Highly recommend if you want a proper Japanese knife without spending a fortune.
Cant believe how sharp it is, honestly. Sliced a whole salmon for dinner and it was effortless, no tearing at all. Feels really well made.
Love this knife. It's got a nice heft to it without being heavy, feels really precise. The damascus pattern is even nicer in person.
