Introducing the Misuzu 美鈴 by Shimeru, a premium 7.5″ gyuto knife that embodies quiet elegance and refined precision. Named after the "beautiful bell," the Misuzu resonates with understated sophistication, a blade for those who appreciate craftsmanship that speaks through performance rather than spectacle.
67-Layer Damascus Steel Perfection The Misuzu's blade is forged from 67 layers of premium Damascus steel with a VG10 cutting core, renowned for its exceptional sharpness, durability, and edge retention. The flowing wave pattern across the blade showcases the artistry of traditional Damascus forging, while the sleek, polished finish allows for smooth, effortless cuts. From delicate slicing to precise detail work, the Misuzu delivers with unwavering consistency.
Classic Rosewood Handle The handle is crafted from rich, deep-grained rosewood, offering timeless beauty and natural warmth. A brass mosaic pin provides a subtle accent, while the angular octagonal profile ensures a secure, comfortable grip that feels intuitive in the hand. Designed for balance and control, the Misuzu minimises fatigue and maximises precision, even during extended use.
Nimble and Versatile At 7.5″, the Misuzu offers an agile blade length that excels in detailed knife work and swift, controlled cuts. Step 1 — Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher — the harsh detergents and jostling will damage the edge and handle.
Step 2 — Dry
Towel dry immediately. Don't leave it wet or in the sink — even stainless steel can develop spots if left damp.
Step 3 — Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer — it dulls the edge and is a safety hazard.
That's it — no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Great knife for the price point. Sharp as hell and looks the part. I've got other Japanese knives that cost more but this one holds its own. Minor thing is the blade is a bit thin for heavy chopping so I use my old one for butternut squash. Everything else it flies through.
Brilliant knife. I was a bit sceptical at the price cos it's cheaper than some others I looked at but it's quality all the way. The rocking motion on the gyuto is lovely for herbs. Already recommended it to a mate.
Got this last week and it's already my go-to knife. The blade is razor sharp out the box, made chopping veg an absolute pleasure. The pattern on the Damascus is lovely, proper looking thing too. Cant fault it for the money.
Ok so the knife itself is brilliant, amazing edge and feels premium. I just wish they did a slightly longer version, 7.5 inch is fine for most stuff but sometimes I fancy a bit more length for carving. Still a great buy.
Honestly one of the best knives I've owned. The 67 layers aren't just for show, the blade feels sturdy and cuts like a dream. The wave pattern is really eye-catching. Arrived well packaged and sharp as anything.
Really impressed with the quality of the blade, the Damascus pattern is beautiful. The only reason I'm not giving 5 stars is the handle took me a few days to get used to, it's a bit different shaped to what I'm used to. But now I love it, cuts veg like nothing.
Bought as a gift for my dad who's a bit of a foodie. He loves it but said it's a touch heavier than his old one. Still, he's used it for everything from onions to steak and reckons the edge lasts ages. Came nicely packaged too.
It's alright for the money. The blade is sharp and the design is nice but I wasn't blown away. The handle feels a bit cheap compared to my Wusthof, and the balance is a little off for me. Does the job but I expected more given the hype.
So I've been using a cheapo set for years and thought I'd treat myself. This Misuzu is a massive upgrade. The VG10 core holds an edge far better than I expected. Did a whole chicken with it the other day and it was effortless. Handle feels good in the hand too.
Really good knife overall, the sharpness is incredible and it looks stunning. My only niggle is the handle is a tiny bit thinner than I'd like but it's fine once you get used to it. Would definitely buy again though.
