The Tokachi トカㇷ゚チ by Shimeru is a premium 8.5" gyuto chef knife that blends modern performance with timeless craftsmanship. Designed for both professional chefs and passionate home cooks, it offers the precision, balance and versatility needed for every culinary task.
The blade is expertly forged from high-quality stainless steel to deliver exceptional durability and edge retention. Honed to a fine 15° cutting angle, it glides effortlessly through vegetables, meats and fish, ensuring clean and precise cuts whether you are chopping, dicing or slicing.
Its handle is crafted from richly grained Mkuruti wood, prized for its natural strength and warm, distinctive character. Smooth and comfortable in the hand, the handle’s carefully contoured oval shape provides a secure, well-balanced grip that reduces fatigue and enhances control even during long prep sessions.
Built to withstand the rigours of everyday cooking while retaining its sharpness and elegance, the Tokachi 8.5" Stainless Steel Gyuto/Chef Knife is a true statement of functional artistry. It is the ideal all-purpose knife for anyone seeking professional-level performance and refined style in the kitchen.
Crafted from professional-grade, heat-treated high-carbon steel, Shimeru Knives deliver exceptional sharpness, durability, and edge retention. From the first slice, you’ll experience the precision that sets us apart.
Our knives are guaranteed to be the sharpest you’ve ever owned. No exceptions, no compromises. Just razor-sharp blades that elevate your culinary experience.
Shimeru Knives feature uniquely designed handles that not only add a sophisticated touch to your kitchen but also provide a comfortable, secure grip for effortless chopping and slicing.
With a double-bevel edge sharpened to 15° (compared to the standard 20-25° of most Western knives), our blades allow for smoother, faster cuts, enhancing your cooking efficiency by 2 to 3 times.
Not sure which knife?
Answer a few quick questions about how you cook, and we'll match you with the perfect blade.
Step 1, Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher, the harsh detergents and jostling will damage the edge and handle.
Step 2, Dry
Towel dry immediately. Don't leave it wet or in the sink, even stainless steel can develop spots if left damp.
Step 3, Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer, it dulls the edge and is a safety hazard.
That's it, no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Its ok I spose. Bought it cause I wanted something better than my old supermarket set. The blade is sharp enough and it cuts nice but it just feels a bit... average? I dunno, for nearly £60 I thought itd be a bit more special. Its not heavy or anything but the balance is a touch off for me. Kept it cause I cant be bothered sending it back.
got this knife for my dad's birthday, he's a fussy cook but he's been using it loads. came well sharp, slices tomatoes so thin you can see through em. only thing is he said the handle felt a bit blocky at first, took him a few days to get used to. for 60 quid its a decent bit of kit though.
Got the 9.5 inch one by accident (meant to click 8.5) but honestly glad I did. Feels balanced even with the extra length. Made short work of a butternut squash which is usually a nightmare. Better than the Global I used to have and half the price. Delivery was next day too which was a bonus.
Ok so I'm not a pro chef or anything but this knife has made prep work so much more enjoyable. First thing I did was chop onions – no tears, dead clean cuts. That 15° angle really makes a difference. Came nicely packaged and the handle has a nice weight to it. Used it for about a month now and still razor sharp. Proper bargain for the price.
I'm not a pro but this knife makes me feel like one. The way it cuts is so smooth. Been enjoying prepping meals a lot more since I got it.
Cant fault it. Took it straight out the packaging and sliced a roast chicken like butter. Packaging was spot on, no damage.
Really pleased with it, sharp as you like. The packaging was lovely. I'd have given 5 but I find the blade a smidge too flexible for chopping through dense root veg. Still a great knife.
Love the thin blade profile, makes dicing so much more precise. Used it for a big prep session making curry and it never dulled. Really pleased.
Solid piece of kit. The 15 degree edge is a dream, glides through onions without any tearing. Much nicer than my old Victorinox.
Bought this as a gift for my son who's a trainee chef. He absolutely loves it, said it's the sharpest knife he's used so far. Made up with the purchase.
