Shirakawa 白川 8″ Damascus Steel Gyuto Knife 牛刀
Introducing the Shirakawa 白川 by Shimeru, a premium 8″ gyuto knife that captures the essence of purity and precision. Named after the pristine white rivers of Japan, the Shirakawa combines striking visual beauty with exceptional cutting performance, crafted for chefs and home cooks who refuse to compromise on quality.
67-Layer Damascus Steel Excellence The Shirakawa's blade is forged from 67 layers of premium Damascus steel, encasing a razor-sharp VG10 core renowned for its edge retention and durability. The distinctive wave pattern etched into every blade is a testament to traditional forging techniques, while the hammered finish reduces drag for smoother, more effortless cuts. Whether you're slicing delicate sashimi, dicing vegetables, or breaking down proteins, the Shirakawa delivers precision with every stroke.
Luminous Handle Design The handle is a stunning composition of rich lofidied wood crowned with lustrous white resin, evoking the tranquil beauty of snow-capped peaks meeting ancient forest. This combination offers not only visual elegance but also exceptional durability and moisture resistance. The ergonomic profile sits naturally in the hand, providing a secure grip and balanced control that minimises fatigue during extended use.
Versatility Meets Precision At 8″, the Shirakawa gyuto is the quintessential chef's knife, equally adept at fine knife work and robust chopping tasks. Its expertly balanced weight distribution allows for agile, confident movements, making it an indispensable companion for everyday meal preparation and ambitious culinary projects alike.

SaleBought this for my husband who loves to cook, he's over the moon with it. He says the balance is spot on and the VG10 core holds an edge brilliantly. He's used it on everything from veg prep to breaking down a chicken and reckons it's the best knife he's ever owned. Money well spent.
Really nice knife, cuts beautifully. The handle shape is just a tiny bit different to what I'm used to, took a day or two to get comfortable with it. Still a great bit of kit though.
Got this to replace my old supermarket knife and wow, what a difference. The weight is perfect and it glides through veg like its nothing. My new favourite thing in the kitchen.
So I got this to replace my old chef's knife and honestly it's a massive upgrade. The damascus pattern is stunning, really nice looking thing. It's been my main knife for a few weeks now and the edge is still ridiculously sharp, goes through onions and tomatoes like they're not even there. Came in a nice box too which was a nice touch.
Really nice knife overall, the cutting performance is fantastic and it looks the part. My only very minor thing is the handle shape, it's a bit more oval than I'm used to so took a day or two to feel completely natural in my hand. But I'd definitely recommend it, especially for the price.
Brilliant knife, exactly what I needed. Lovely edge on it.
Really good knife, makes prep so much faster. My only gripe is purely aesthetic, I wish the damascus pattern was a bit more pronounced, its a bit subtle for my taste. Still performs brilliantly.
It's a decent knife. Does the job fine, sharp out the box and the damascus finish is pretty. I suppose I was expecting to be a bit more wowed for sixty quid though? It's good, don't get me wrong, but it hasn't revolutionised my cooking or anything. Just feels like a good, solid knife.
The look of this knife is just beautiful, almost too nice to use. But I do use it, and it performs brilliantly. Cuts tomatoes like a dream.
Used it to break down a whole chicken, handled the joints and bones around them no bother. Still razor sharp afterwards. Chuffed.
Alright I suppose. Gets through vegetables well enough. Handle feels a bit generic to me, not as premium as I hoped. Its not bad, just a bit meh for the cost.
Cant believe how good this is for the price. The finish is top notch and its so much better than the expensive brand I looked at in John Lewis.
So sharp out of the box. Used it on some beef and it was effortless. Handle feels really secure in the hand, no slipping even when wet.
Brilliant knife, exactly what I needed. Lovely edge on it.
Does exactly what it says on the tin. Sharp, good looking, solid. Not quite as laser-like as some more expensive gyutos I've tried, but for this price its excellent.
Arrived next day which was a bonus. Knife itself is lovely, great for the rocking motion when chopping herbs. Feels like a proper bit of kit.
Perfect weight for me, not too light not too heavy. Sliced through a butternut squash with no problem at all. Very impressed.
Very pleased overall. The blade is fantastic, holds an edge really well. My only minor thing is I wish it came in a 9 inch option as I've got big hands, but the 8 inch is still brilliant for most tasks.
Bought this for my partner and she loves it. She says its her go-to for most veg prep. She did mention she'd prefer if the handle was a touch more rounded, but its a small thing. Works a treat.
Been using this daily for a month now and the edge is still ridiculously sharp. Makes prepping dinner a joy instead of a chore.
Bought this for my husband whos really into his cooking. He absolutely loves it, says the balance is spot on and the damascus pattern is stunning. Came in a nice box too.
Lovely knife, sharp and looks the part. It's slightly heavier than I expected but I actually prefer it now I've used it a bit, gives more control. Would recommend.
Massive upgrade from my old block set. The VG10 core seems to hold its edge for ages. Really pleased with it.
Its a decent knife. Cuts fine and looks okay. For the price though I was expecting to be a bit more wowed. Does the job but nothing special in my opinion.
Ok so I was a bit nervous spending this much on a knife but its worth it. Makes quick work of onions and the edge retention is great as everyone says.
