Kinzan 金山 7.7″ Damascus Steel Gyuto Japanese Chef Knife 牛刀
Introducing the Kinzan 金山 by Shimeru, a premium 7.7″ gyuto knife that celebrates the timeless beauty of traditional Japanese craftsmanship. Named after the "Golden Mountain," the Kinzan radiates warmth and refinement, offering exceptional cutting performance in a blade destined to become a treasured kitchen heirloom.
67-Layer Damascus Steel Brilliance The Kinzan's blade is meticulously forged from 67 layers of premium Damascus steel, encasing a VG10 core celebrated for its outstanding sharpness and edge retention. The intricate flowing pattern across the blade surface tells the story of expert forging, while the hammered tsuchime finish reduces friction and prevents food from clinging to the steel. Every cut is precise, effortless, and controlled.
Elegant Rosewood and Amber Handle The handle is a showcase of natural sophistication, crafted from rich, deep-grained rosewood that exudes classic elegance. A luminous amber resin spacer adds a touch of warmth and distinction, complemented by polished steel accents that frame the design beautifully. The octagonal profile provides a secure, comfortable grip, allowing for confident control and reduced hand fatigue during extended culinary sessions.
Agile Precision At 7.7″, the Kinzan offers a nimble yet capable blade length, perfectly suited for chefs who appreciate agility without sacrificing versatility. From delicate herb chiffonades to swift vegetable prep and precision protein work, the Kinzan responds to every movement with grace and accuracy.
Timeless Craftsmanship The Kinzan 金山 7.7″ Damascus Steel Gyuto Japanese Chef Knife is a celebration of heritage and artistry. For those who seek a knife that honours tradition while delivering modern performance, the Kinzan will bring warmth, precision, and inspiration to your kitchen for years to come.

SaleIts a decent knife. Looks nice and is sharp. I dont know, for the price I guess I was expecting to be a bit more wowed. It does the job but doesnt feel that much different from my old one that cost half as much.
Ok so I was a bit nervous spending this much on a knife but I'm so glad I did. The weight and the way it rocks through herbs is just spot on. Cant believe how sharp it is out the box, sliced a tomato paper thin with no effort at all. Massive upgrade.
So I got this to replace my old supermarket chef's knife and wow, what a difference. The damascus pattern is stunning in person, photos dont do it justice. It just glides through veg, makes prepping dinner a joy. Been using it for a fortnight now and its still razor sharp.
Happy with it. Does everything I need it to. Maybe expected the damascus pattern to be a bit more pronounced in person, its a bit subtle. Cuts brilliantly though, no complaints on performance.
Lovely knife. The handle feels great in the hand, not too bulky. I use it mostly for veg prep and it's brilliant, makes quick work of onions and peppers. Arrived next day which was a bonus. Really happy with it.
Bought this for my husband whos really into his cooking. He absolutely loves it, said the balance is perfect and the VG10 core holds an edge brilliantly. Came in a nice box too which made it feel like a proper present. He's already talking about getting another one.
I've had this a month now, using it nearly every day. The edge retention is seriously good, haven't had to sharpen it yet. It just feels like a quality bit of kit, solid and well made. The 'golden mountain' thing is a bit cheesy but the knife itself is fantastic.
Massive upgrade from my old set. This is my first proper Japanese knife and I get the hype now. Slices through onions like theyre not even there.
Really nice knife, the sharpness is incredible. My only minor thing is the handle, its a bit more oval than I'm used to so took a day or two to get comfortable with. Still a great purchase.
Very pleased overall. The blade is a work of art and holds an edge well. I find it a tiny bit heavier than my old gyuto but I'm actually getting to prefer the heft now. Good value.
Its good. Sharp out the box. I've used it for a few weeks and its a capable knife. Just feels a bit... standard? Maybe my expectations were too high. Does what it says on the tin, nothing more nothing less.
Lovely knife, cuts beautifully. The damascus pattern is stunning. I do wish it came in a slightly longer version, maybe an 8 or 9 inch, as I have big hands. But for the price its fantastic.
Solid performer. Looks the part and arrives sharp. I think for a gyuto I'd prefer a slightly more curved profile for rocking, this one is quite flat. Still a very good knife and I use it all the time.
Came really well packaged in a nice box. The blade is beautiful, proper craftsmanship. Cuts like a dream, my old santoku feels like a butter knife now.
Bought this as a treat for myself after using rubbish supermarket knives for years. The difference is night and day. It glides through tomatoes and the handle feels really solid. Chuffed with it.
Impressive bit of kit for the money. The VG10 core is no joke, stays sharp. I think I just prefer a wa handle over this western style one, personal preference really. Does the job brilliantly though.
Great knife, makes prep so much faster. The presentation box was a nice touch. My only wish is that the handle was a touch grippier, it can feel a bit smooth if your hands are wet. Still recommends.
Absolutely love this knife. The damascus pattern is stunning and its so sharp out the box. Makes prepping veg a dream.
Arrived next day which was a bonus. Knife itself is brilliant, the weight and balance is spot on for a gyuto. Makes cooking much more enjoyable.
Birthday present for the wife and shes over the moon. She says its the sharpest knife shes ever used and loves the way it looks on the magnetic strip.
So impressed. I was a bit nervous spending this much on a knife but its worth it. The VG10 core holds an edge brilliantly. Used it to break down a whole chicken and it handled everything with ease.
Got this for my husband whos a bit of a foodie. He wont put it down. Says the balance is perfect and the edge is still razor sharp after a month of heavy use.
Perfect size for my hands. I use it for almost everything now. The edge retention is fantastic, havent had to sharpen it yet.
The look of this knife is just gorgeous, the pattern is mesmerising. Performs as good as it looks, lovely rocking motion for herbs.
Bought this to replace a cheaper knife. Its definitely a step up, the edge is superb. I did find the balance point is a bit more forward than I expected, but you get used to it. Cuts like a dream.
