Kinzan 金山 7.7″ Damascus Steel Gyuto Japanese Chef Knife 牛刀
Introducing the Kinzan 金山 by Shimeru, a premium 7.7″ gyuto knife that celebrates the timeless beauty of traditional Japanese craftsmanship. Named after the "Golden Mountain," the Kinzan radiates warmth and refinement, offering exceptional cutting performance in a blade destined to become a treasured kitchen heirloom.
67-Layer Damascus Steel Brilliance The Kinzan's blade is meticulously forged from 67 layers of premium Damascus steel, encasing a VG10 core celebrated for its outstanding sharpness and edge retention. The intricate flowing pattern across the blade surface tells the story of expert forging, while the hammered tsuchime finish reduces friction and prevents food from clinging to the steel. Every cut is precise, effortless, and controlled.
Elegant Rosewood and Amber Handle The handle is a showcase of natural sophistication, crafted from rich, deep-grained rosewood that exudes classic elegance. A luminous amber resin spacer adds a touch of warmth and distinction, complemented by polished steel accents that frame the design beautifully. The octagonal profile provides a secure, comfortable grip, allowing for confident control and reduced hand fatigue during extended culinary sessions.
Agile Precision At 7.7″, the Kinzan offers a nimble yet capable blade length, perfectly suited for chefs who appreciate agility without sacrificing versatility. From delicate herb chiffonades to swift vegetable prep and precision protein work, the Kinzan responds to every movement with grace and accuracy.
Timeless Craftsmanship The Kinzan 金山 7.7″ Damascus Steel Gyuto Japanese Chef Knife is a celebration of heritage and artistry. For those who seek a knife that honours tradition while delivering modern performance, the Kinzan will bring warmth, precision, and inspiration to your kitchen for years to come.

Step 1 — Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher — the harsh detergents and jostling will damage the edge and handle.
Step 2 — Dry
Towel dry immediately. Don't leave it wet or in the sink — even stainless steel can develop spots if left damp.
Step 3 — Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer — it dulls the edge and is a safety hazard.
That's it — no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
So I got this for my husband for his birthday and he loves it. He said it makes quick work of chopping veg and the blade looks beautiful with those layers. Came in a lovely box too. Cant fault it for the price.
Really impressive knife for under seventy quid. Used it to prep a whole Sunday roast and it handled everything from the chicken to the root veg without needing a sharpen. The Damascus finish is proper eye candy as well. Definitely recommend.
Its alright, does the job but I was expecting a bit more given the description. The damascus pattern is nice but the knife feels a little unbalanced in my hand. Not bad for the price but I've had better.
Good quality for the money. The blade is sharp and holds its edge decently. I do wish it came in a slightly longer version for bigger jobs but thats just personal preference. Happy with it.
Brilliant knife, exactly what I needed. Lovely edge on it out the box. Massive upgrade from the random Amazon set I had before. The handle feels good in my hand.
Been using it every day since it arrived about a month ago. Cuts through everything like butter, no joke. The VG10 steel holds its edge really well compared to my old Global. The handle is comfortable too, nice weight to it. Only thing is I wish I'd bought this sooner.
Nice knife overall, cuts really well and looks the part. Only minor thing is the handle is a bit thicker than what I'm used to but I've gotten on fine with it after a few uses. Would still recommend it.
Got this a couple weeks ago and it's brilliant. The damascus pattern is stunning and it came sharper than any knife I've ever owned. Made mincing garlic an absolute doddle. Already ordered another for my mate.
Its a decent knife. Looks nice and is sharp. I dont know, for the price I guess I was expecting to be a bit more wowed. It does the job but doesnt feel that much different from my old one that cost half as much.
Ok so I was a bit nervous spending this much on a knife but I'm so glad I did. The weight and the way it rocks through herbs is just spot on. Cant believe how sharp it is out the box, sliced a tomato paper thin with no effort at all. Massive upgrade.
