Step 1 — Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher — the harsh detergents and jostling will damage the edge and handle.
Step 2 — Dry
Towel dry immediately. Don't leave it wet or in the sink — even stainless steel can develop spots if left damp.
Step 3 — Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer — it dulls the edge and is a safety hazard.
That's it — no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Unmatched Hardness, Surgical Precision
Discover the ultimate in sharpening performance with the Shimeru Diamond Rolling Sharpener, designed for chefs who demand durability, speed, and refined precision. Featuring ultra-hard diamond-coated grinding discs in #400 and #1000 grit, this system tackles even the hardest steels with ease.
Why Diamond?
Diamond abrasives are the hardest sharpening material available. The #400 grit disc is ideal for fast edge restoration—removing chips, reshaping blades, and reviving dull edges. The finer #1000 grit disc polishes and refines the blade, creating a razor-sharp edge ready for precise slicing.
How to Use:
Start with the #400 grit to reshape or repair, then switch to the #1000 for fine honing. The rolling action ensures even contact, and the 15°/20° magnetic angle guide locks in perfect geometry for both Western and Japanese-style knives.
Perfect For:
Crafted from professional-grade, heat-treated high-carbon steel, Shimeru Knives deliver exceptional sharpness, durability, and edge retention. From the first slice, you’ll experience the precision that sets us apart.
Our knives are guaranteed to be the sharpest you’ve ever owned. No exceptions, no compromises—just razor-sharp blades that elevate your culinary experience.
Shimeru Knives feature uniquely designed handles that not only add a sophisticated touch to your kitchen but also provide a comfortable, secure grip for effortless chopping and slicing.
With a double-bevel edge sharpened to 15°—compared to the standard 20-25° of most Western knives—our blades allow for smoother, faster cuts, enhancing your cooking efficiency by 2 to 3 times.

SaleGot this to keep my Shun knives in shape after I got tired of messing with stones. It does a decent job but I wish the fine side was a bit finer for that really polished edge you get from a high grit stone. Still, its way more convenient and the magnetic thing works well.
My dad is a retired chef and he was proper impressed when I showed him this. He said the #400 grit is perfect for his old Sabatier that hed neglected for years. The #1000 side gave it a finish he said was better than his old stone. He’s already ordered one for himself.
Good sharpener but slightly heavier than I expected. Not a deal breaker though, it sits fine on the counter. The diamond discs work well, specially the #400 for quick repairs. Would’ve liked a bit more guidance on the angle but you get the hang of it after a few goes.
Finally a sharpener that actually works on my German steel knives. The magnetic roller is really clever, holds the knife at the right angle without me having to think about it. Took my old Wusthof from blunt to sharp in about 2 minutes. Dead chuffed with it.
Honestly didnt think I needed a special sharpener but my flatmate kept moaning about my blunt knives. This thing is so easy to use. Magnetic bit holds the blade steady and you just roll it back and forth. My £20 chefs knife now cuts like a dream. Cant believe it.
Got this for my husband who’s a proper foodie and he reckons its the best sharpener hes ever used. The #400 side sorted out a nasty nick on his favourite chefs knife and the #1000 side left a beautiful polished edge. Feels solid and well made too.
Works well on most of my knives. The #400 side is really aggressive so go easy on it at first. The #1000 side leaves a good working edge. Only gripe is the handle shape is a bit chunky for my small hands but I’ve got used to it. Good value for what you get.
Massive upgrade from the whetstone I was using. The diamond discs are way faster and the rolling action means I dont mess up the angle. Used it on my Victorinox and it went through tomatoes like butter. Brilliant tool.
Bought this after ruining a few knives with those pull-through sharpeners. This is a proper bit of kit. The diamond discs are really aggressive on the coarse side but you can feel when the edge is coming back. Finish on the fine side is like a mirror. So glad I got it.
Simples. It makes my knives sharp again. I’m no expert but the magnetic guide makes it foolproof. Even my Global knives came up lovely. Arrived quick and well packaged. Would buy again.
