Unmatched Hardness, Surgical Precision
Discover the ultimate in sharpening performance with the Shimeru Diamond Rolling Sharpener, designed for chefs who demand durability, speed, and refined precision. Featuring ultra-hard diamond-coated grinding discs in #400 and #1000 grit, this system tackles even the hardest steels with ease.
Why Diamond?
Diamond abrasives are the hardest sharpening material available. The #400 grit disc is ideal for fast edge restoration—removing chips, reshaping blades, and reviving dull edges. The finer #1000 grit disc polishes and refines the blade, creating a razor-sharp edge ready for precise slicing.
How to Use:
Start with the #400 grit to reshape or repair, then switch to the #1000 for fine honing. The rolling action ensures even contact, and the 15°/20° magnetic angle guide locks in perfect geometry for both Western and Japanese-style knives.
Perfect For:
High-carbon and stainless steel knives
Quick reshaping and precision finishing
Pros who want long-lasting sharpening power without water or oil
Crafted from professional-grade, heat-treated high-carbon steel, Shimeru Knives deliver exceptional sharpness, durability, and edge retention. From the first slice, you’ll experience the precision that sets us apart.
Our knives are guaranteed to be the sharpest you’ve ever owned. No exceptions, no compromises—just razor-sharp blades that elevate your culinary experience.
Shimeru Knives feature uniquely designed handles that not only add a sophisticated touch to your kitchen but also provide a comfortable, secure grip for effortless chopping and slicing.
With a double-bevel edge sharpened to 15°—compared to the standard 20-25° of most Western knives—our blades allow for smoother, faster cuts, enhancing your cooking efficiency by 2 to 3 times.

SaleCant believe how quick this thing is. My old pull-through sharpener was rubbish, this is a massive upgrade. The diamond discs are aggressive so you dont have to do it for ages, just a few passes and you're sorted. My santoku glides through tomatoes now, no crushing at all. Really pleased with it.
Bought this for my husband who's always complaining about blunt knives. He was a bit sceptical at first but after using it he's chuffed. Says the two different grits make a real difference, the 400 sorts out any nicks and the 1000 gives it a proper polish. Build quality feels solid, not plasticky. Came really well packaged too.
Ok so I was worried about damaging my good knives but this is spot on. The rolling action feels controlled and the magnets hold the blade at the right angle so you cant mess it up. Used the coarse side on an old chef's knife that had a proper chip in it, took it out no problem. Works a treat, definitely recommend.
Got this to maintain my new knife set. It's solidly built, feels like it'll last for years. Instructions were clear, got the hang of it straight away. Really pleased.
It's alright. Does sharpen the knife, but I'm not blown away. For fifty quid I guess I expected it to feel a bit more premium or maybe do the job quicker. It works, but it's just okay.
Does exactly what it says on the tin, my knives are lovely and sharp now. Only reason it's not a full 5 stars is I wish the handle was a bit chunkier, my hands are quite big and it feels a touch small to get a really firm grip. That's just me being picky though, it's a great bit of kit and I use it every week.
So I've had this sharpener for a couple months now, used it on all my knives from my cheap ones to my proper Japanese one. It's dead easy to use, just roll it along the blade a few times and you're done. The magnets are strong so it feels secure, and the results are honestly brilliant. My knives are sharper now than when they were new, makes prepping veg a doddle.
Been using it for a few weeks on all my knives. The difference is night and day. The coarse side is proper quick for fixing an edge, the fine side gives it that final touch. Does what it says on the tin.
Great bit of kit. My only thing is the angle guide takes a minute to get used to, found myself checking it a lot at the start. Now I'm used to it, it's quick and effective.
Mixed feelings. It definitely sharpens, and the two grits are useful. But for the price, I'm not convinced it's that much better than my old £20 manual sharpener. The results are good, not great. It's a decent product.
Very impressed with the results. The edge it gives is superb. I just wish it came with some sort of simple cover or case for the discs, just to keep dust off when it's in the drawer.
Took my time getting the angle right at first but once you've got it, it's a breeze. Knives glide through everything now. Great product.
Was a bit sceptical but it works a treat. The 400 grit sorted out a tiny chip in my gyuto no problem, then the 1000 made it lovely and polished. Arrived next day too.
Nice bit of kit. Came well packaged in a box. The rolling mechanism is smooth and it feels sturdy in the hand. My knives are scarily sharp now, have to be more careful!
Finally a sharpener that works on my proper Japanese steel. The magnets are a clever idea, stops any wobble. My knives have never been this sharp, makes prep so much quicker.
Birthday present for myself. Worth every penny. The diamond abrasive is so much faster than the ceramic rods I had before. Edge it puts on is proper professional.
Upgraded from a cheap sharpener and the difference is massive. The 1000 grit leaves a really refined edge, perfect for fish and veg. My favourite kitchen tool now.
Bought this for my husband who's always complaining about blunt knives. He's a bit of a gadget man and he loves it. Says the two different grits make sense, gets a really good edge on his chef's knife now.
Really good sharpener, does a fantastic job. My only tiny gripe is I wish the handle was a bit chunkier, it feels a little slim for my hands. Still, gets the knives razor sharp.
Works brilliantly, my knives are like new. It's a bit heavier than I was expecting when you pick it up, but that's probably a sign it's well made. No complaints on performance.
Bought this to replace a manual pull-through. It's in a different league. I do find I have to clean the metal dust off the magnets after each use, but that's a minor thing. Sharpens beautifully.
Decent enough. Gets my knives sharper than they were. Found the rolling action a bit stiff at first, loosened up a bit but still not as smooth as I'd like. It's fine, does the job.
Does exactly what it's supposed to. The magnets are strong and it's easy to use. Think the price is a tad high, but you're paying for the diamond abrasive I suppose. Happy with it overall.
Bought it as a gift for my son who's just got his own place. He rang me up raving about how sharp his knives are now. Looks smart too, sits on the counter.
So my old pull through sharpener was rubbish, this is a massive step up. The magnets are strong, holds the knife solid. My santoku is now sharper than it was new, proper chuffed with it.
