Step 1, Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher, the harsh detergents and jostling will damage the edge and handle.
Step 2, Dry
Towel dry immediately. Don't leave it wet or in the sink, even stainless steel can develop spots if left damp.
Step 3, Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer, it dulls the edge and is a safety hazard.
That's it, no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Precision.
Balance.
Craft.

Unmatched Hardness, Surgical Precision
Discover the ultimate in sharpening performance with the Shimeru Diamond Rolling Sharpener, designed for chefs who demand durability, speed, and refined precision. Featuring ultra-hard diamond-coated grinding discs in #400 and #1000 grit, this system tackles even the hardest steels with ease.
Why Diamond?
Diamond abrasives are the hardest sharpening material available. The #400 grit disc is ideal for fast edge restoration—removing chips, reshaping blades, and reviving dull edges. The finer #1000 grit disc polishes and refines the blade, creating a razor-sharp edge ready for precise slicing.
How to Use:
Start with the #400 grit to reshape or repair, then switch to the #1000 for fine honing. The rolling action ensures even contact, and the 15°/20° magnetic angle guide locks in perfect geometry for both Western and Japanese-style knives.
Perfect For:
Crafted from professional-grade, heat-treated high-carbon steel, Shimeru Knives deliver exceptional sharpness, durability, and edge retention. From the first slice, you’ll experience the precision that sets us apart.
Our knives are guaranteed to be the sharpest you’ve ever owned. No exceptions, no compromises. Just razor-sharp blades that elevate your culinary experience.
Shimeru Knives feature uniquely designed handles that not only add a sophisticated touch to your kitchen but also provide a comfortable, secure grip for effortless chopping and slicing.
With a double-bevel edge sharpened to 15° (compared to the standard 20-25° of most Western knives), our blades allow for smoother, faster cuts, enhancing your cooking efficiency by 2 to 3 times.

SaleBought this for my dad for his birthday as he's always complaining about blunt knives but never bothered to learn whetstones. He's had it a couple weeks now and his main chef knife is proper sharp again, he even managed to sort out a few chips on the edge with the coarse side. Build quality is good, the rolling action feels stable on the worktop. My only wish is that it came with a little storage pouch or something because it just sits in the drawer and the diamond discs could get knocked about. Saying that, does exactly what it says on the tin. Would buy another one for myself honestly.
Ok so I bought this after seeing it on instagram, bit sceptical tbh but its actually pretty good. The diamond discs feel solid and it puts a decent edge on my old Wusthof santoku which is no easy feat. Only thing is its a bit heavier than I expected so doing loads of knives at once gets tiring on the wrist. But for the odd touch up here and there its perfect. Came well packaged too.
Got this to keep my chefs knives in shape without dragging out the whetstones. Does the job nicely, edge is noticeably better after a few rolls. The magnet holds the knife at the right angle but I do wish the handle was a bit chunkier for my big hands. Still, would recommend for the price.
Got this after watching a few videos online. Works brilliantly on my Global knives, the 1000 grit leaves a lovely polish. Only thing is the handle is a bit chunky for my small hands, takes a bit of adjusting but once you find the right grip it's fine. Wish it came with a little stand or something for storage but not a dealbreaker. Would still recommend.
Bought this for my husband for his birthday and he's absolutely made up. He's been sharpening every knife in the house and they're now sharper than when we first got them. The magnetic hold is dead clever, keeps the angle spot on. Came really well packaged too.
So I was a bit sceptical about these rolling sharpeners but this one is proper good. The diamond discs are the real deal, got my old chefs knife back to scary sharp in a few minutes. The magnetic bit keeps the angle consistent which is what I always struggle with. Used the 400 side first then finished on 1000, edge is now razor sharp. Took a bit to get the hang of the rolling motion but now its second nature. Build feels solid too, nice weight to it. Definitely recommend if you're rubbish at whetstones like me. Proper chuffed!
Ok so I bought this after seeing a few clips of rolling sharpeners online. It does sharpen, takes a few goes with the 400 then the 1000 to get my chef knife back to a decent edge, but it's not as effortless as it looks. The magnet holds the blade at the right angle which is handy but you still need to apply a bit of pressure and keep it steady. For £60 I was expecting something a bit more substantial in the hand, the whole thing is quite light. I'll keep using it but I'm not sure it's really worth the money compared to my old whetstone.
Got this for my husband for his birthday and he absolutely loves it. Didnt take long to figure out the rolling motion and now all our kitchen knives are proper sharp again, even the cheap ones from tesco. The diamond discs make quick work of dull blades and the little magnet holds the knife in place nicely. Bit pricey but worth it if you cook a lot.
Ok so i got this because i was tired of using a whetstone and making a mess. The rolling design is clever, you just roll it back and forth along the blade. The 400 grit sorted out a chip on my santoku no problem. I'm giving 4 stars only because i do think for sixty quid they could include a little storage pouch or something, but other than that no complaints. my knife skills in the kitchen have definitely improved since everything is razor sharp.
This sharpener does a decent job. I've been using it on my Wusthof and it brings the edge back quickly with the coarse side, then the fine side polishes it up. Only thing is I wish the handle was a bit longer or had a different grip, after a few knives my hand starts to cramp a little. Still, results are proper good and my knives are sharper than they've been in ages.
