Step 1, Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher, the harsh detergents and jostling will damage the edge and handle.
Step 2, Dry
Towel dry immediately. Don't leave it wet or in the sink, even stainless steel can develop spots if left damp.
Step 3, Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer, it dulls the edge and is a safety hazard.

Bought this after my old nakiri finally gave up after years of use. The AUS10 steel keeps an edge really well, used it daily for a couple weeks and only needed a quick strop. It's a bit heavier than I expected but actually helps with dense veg like celeriac. Came really well packaged too. My only gripe is the handle could do with being slightly longer for my big hands, but that's subjective.
Sharp out the box, does a brilliant job on onions and peppers. Handle is a bit thin for my liking but that's just a personal thing. Would recommend for the price.

I've been using a cheap utility knife for veg for years and finally decided to get a proper nakiri. The AUS10 steel is no joke, I've sharpened it once since I got it a month ago and it's still scary sharp. Bit heavier than I expected but the weight actually helps with chopping through squash and sweet potato. The hammered pattern looks lovely too. Delivery was quick, well packaged.

The hammered finish actually does stop stuff sticking which I was a bit sceptical about. Edge is still proper sharp after a few weeks of daily use. Proper upgrade from my old santoku.
Really good knife for the money, use it most days now for chopping veg. Flat profile means you can get right through an onion without leaving those annoying accordion bits at the end. Only minor thing is it's slightly heavier than my old nakiri so my wrist noticed it after a big batch cook, but I've got used to it. Still would recommend.
