Craft.

The Tetsuya 5.7" Butcher Knife captures the spirit of “iron philosophy,” uniting strength, precision and traditional craftsmanship in a striking, functional design. Built for both professional chefs and outdoor enthusiasts, it is the perfect companion for serious butchery and grilling.
5Cr15MoV Stainless Steel Blade
Forged from premium 5Cr15MoV stainless steel, the blade delivers excellent hardness, corrosion resistance and long-lasting edge retention. The hand-hammered finish reduces drag and helps prevent food from sticking, allowing clean, powerful cuts through meat and bone.
Rosewood Handle
The contoured rosewood handle provides natural warmth and durability. Triple-riveted for strength and perfectly balanced for control, it offers a secure, comfortable grip even during long or demanding tasks.
Protective Leather Sheath
A custom leather sheath keeps the Tetsuya safely protected during storage or travel and makes it easy to carry from kitchen to campsite.
Power and Precision
The Tetsuya 5.7" Butcher Knife blends Japanese-inspired design with modern steel performance. From breaking down large cuts to carving roasted meats, it delivers strength, agility and dependable sharpness every time.

Step 1, Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher, the harsh detergents and jostling will damage the edge and handle.
Step 2, Dry
Towel dry immediately. Don't leave it wet or in the sink, even stainless steel can develop spots if left damp.
Step 3, Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer, it dulls the edge and is a safety hazard.
That's it, no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Got this for my husband as he does a lot of bbq. He used it to break down a few racks of ribs and a whole chicken over the weekend, went through bone without any bother. The hammered finish stops meat sticking which I didn't expect but its proper handy. Rosewood handle feels great in the hand and the leather sheath is a nice bonus. For £45 this is a lot of knife.
Decent enough knife but not as versatile as I'd hoped. Bit too heavy for fine work and the handle feels a bit chunky in my hand. Does the job on big cuts of meat and the sheath is good quality. Just expected a bit more refinement for £45 if I'm honest.
Got this for me dad for his birthday and he's chuffed to bits. Used it to joint a chicken and went through like butter. The hand hammered finish looks proper smart and the leather sheath is a nice touch. Holds an edge well after a few weeks of heavy use. For £45 cant fault it really.
Its a decent enough knife but for £45 I was expecting a bit more. The rosewood handle looks nice and the leather sheath is a good addition, but the blade feels a little unbalanced to me, bit handle heavy. Used it on some pork shoulder and it got through it fine but I found myself reaching for my old cleaver after a while. Not bad but not amazing either.
Really solid little cleaver for the price. The blade's got a nice weight to it and the hand-hammered finish does help stop meat sticking as much. Used it to break down a few chickens and it went through joints no bother. The leather sheath's a nice touch too, proper sturdy. My only small grumble is the handle's a touch smooth for my liking, could do with a bit more texture when your hands are wet. Still, for forty-five quid its a good bit of kit.
Properly impressed with this little cleaver. I do a lot of bbq and needed something that could handle prepping ribs and trimming brisket without faff. The rosewood handle feels solid in the hand and the blade keeps its edge nicely. Leather sheath is a nice touch too, means I can chuck it in me bag when we go camping. Big step up from the cheapo one I had before.
Bought this for my husband who does all the butchery at home and hes over the moon. Used it to break down a whole lamb shoulder and it went through like butter, the hand hammered finish really does stop stuff sticking. Came in a nice box as well.
Bought this for my dad for his birthday and he hasn't stopped raving about it. He says the blade holds its edge way better than his old chef's knife. He's already used it on a leg of lamb and some ribs and it handled the bone bits no problem. Leather sheath is a nice touch.
Absolutely chuffed with this knife. Got it for breaking down whole chickens and it slices through skin and cartilage like a dream. The hammered finish actually helps food not stick, which I was a bit skeptical about at first but it works. Came in a nice box too.
Great little knife for the money. I use it for trimming fat off meat and it does the trick perfectly. The only thing is the sheath can be a bit stiff to get the knife in and out, but that'll probably loosen up with use. Arrived next day too.
