Dark Grain 7" Damascus Steel Santoku Knife 三徳包丁
The Dark Grain 7" Damascus Steel Santoku Knife combines Japanese-inspired artistry with modern performance, designed to bring professional-level precision to your home kitchen. From finely dicing vegetables to slicing meats and fish, this Santoku makes every preparation feel effortless and refined.
67-Layer AUS10 Damascus Steel
At its core lies premium AUS10 steel, clad in 67 layers of Damascus steel for exceptional hardness, edge retention and striking visual character. Each unique ripple pattern reflects the craftsmanship behind the blade. Hand-polished and sharpened to a precise 8–12° angle, the edge delivers razor-sharp performance and maintains its keenness through countless meals.
Ebony Wood Handle
The handle is crafted from deep, lustrous ebony wood whose rich grain provides both natural elegance and lasting strength. Perfectly balanced and smoothly contoured, it offers a secure, comfortable grip that ensures confident, controlled movements even during extended prep work.
Hammered Finish for Effortless Cutting
A subtle hand-hammered texture near the spine reduces drag and helps ingredients release easily, allowing each cut to glide cleanly and efficiently.
Culinary Craftsmanship and Everyday Luxury
Beautiful enough to display yet built for daily use, the Dark Grain Santoku is a showcase of precision and artistry. It transforms everyday cooking into a professional, rewarding experience while adding a touch of timeless sophistication to any kitchen.
Ruthlessly sharp, scalpel-like edge is hand finished to a mirror polish within a staggering 8-12° degree angle.
Is made using a blend of traditional handmade techniques and modern processes to achieve exacting standards expected by Japanese consumers and will compare to any Western made knife at even twice the price.
Our finish reduces the adhesion of sticky foods by breaking the vacuum between a smooth surface of the blade and the food being cut.
A comfortable, well-balanced knife which enhances the look of any kitchen as well as the functionality.

Sold OutStep 1 — Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher — the harsh detergents and jostling will damage the edge and handle.
Step 2 — Dry
Towel dry immediately. Don't leave it wet or in the sink — even stainless steel can develop spots if left damp.
Step 3 — Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer — it dulls the edge and is a safety hazard.
That's it — no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Arrived in two days which was a bonus. Straight out the box sharp enough to slice a tomato paper thin. The Damascus layers look stunning in the light, every time I pick it up I notice something different in the pattern. Really chuffed with this purchase.
Was a bit nervous spending this much on a knife but honestly it's so worth it. I do a lot of meal prep and this has cut my chopping time in half. The flat profile is great for dicing onions — no more tears cos it's done so quick. Cant believe how good the edge is out the box.
Brilliant santoku but it's a touch heavier than I was expecting. That said, once you're using it the weight helps with the cutting so it's not a bad thing really. The edge is superb out the box and it's kept it well over a month. Just personal preference that.
It's a decent knife don't get me wrong but for seventy quid I was hoping for something that blew me away. It's sharp and cuts fine but my old 30 quid one from TK Maxx did the job alright too. The pattern is nice but not sure it's worth the extra cash. It'll do but I'm not over the moon.
Finally a knife that doesn't make me dread chopping veg. I've got arthritis in my hands and this is light enough to handle without straining but still has that solid feel. The AUS10 steel seems to stay sharp for ages. Already recommended it to my mate who cooks professionally.
Lovely knife, great quality and arrived quick. The only reason it's not 5 stars for me is I wish they did a 6 inch version for smaller hands. My girlfriend loves it but I prefer a bit more length. Still, can't fault the build or performance.
This knife is absolutely brilliant. Unwrapped it and it just felt quality straight away. Used it for a roast dinner yesterday and slicing through veg was like cutting butter. The blade has a proper weight to it — not too heavy, not too light. Love it.
Got this for my wife's birthday and she hasn't shut up about it since. Says it's the sharpest thing she's ever used in the kitchen. The Damascus pattern is gorgeous too, looks proper fancy on the magnetic strip. Arrived in a nice little box as well which was a nice touch.
So I replaced my old Victorinox with this and it's definitely an upgrade. The Damascus finish is really eye-catching and the steel feels premium. It's maybe a tiny bit behind the Victorinox on ease of sharpening but I'm nitpicking. Solid 4 stars.
Really good knife overall. It's sharp as anything and looks beautiful. Only thing is the handle's a tad slim for my big hands, took a week or so to get used to but now I'm fine with it. Would definitely buy again though.
