Step 1 — Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher — the harsh detergents and jostling will damage the edge and handle.
Step 2 — Dry
Towel dry immediately. Don't leave it wet or in the sink — even stainless steel can develop spots if left damp.
Step 3 — Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer — it dulls the edge and is a safety hazard.
That's it — no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Its an ok set, does the job. The santoku is sharp enough but nothing special. For £55 I expected a bit more heft, the handles feel a bit lightweight. They look nice and all but I'm not as blown away as some of the reviews suggest. Probably wouldnt buy again, might save up for something better.
Got this Ishikari set after my old Victorinox ones were past it. Massive difference — the 15° edge glides through tomatoes without squashing them. Use the chefs knife for meat and the santoku for veg, both hold an edge well after a fortnight of daily use. Handles are comfy, nice wood.
Love these knives! Nice weight to them, feel really solid. The santoku is the perfect size for me. Came really well packaged too.
These knifes are really good, but the santoku blade is a bit thicker than I'd like for delicate slicing. Works well for root veg though. The bread knife in the set is excellent. Overall happy but not perfect.
Good set, the santoku's great but I wish they did a 7 inch version as well. The 5 inch feels a tiny bit short for some tasks. Still, they're sharp and look lovely on the rack.
Proper bit of kit. The set arrived next day, which was a bonus. Blades have a lovely finish and the handles are beautiful. Santoku is my most used, it flies through carrots and spuds.

These knives are sharp as anything. Didnt realise how blunt my old ones were. The santoku's my favourite, makes quick work of onions. Octagonal handle took a day to get used to but its brilliant now.
Lovely set, the wood handles are gorgeous. The santoku is my favourite, but the nakiri could be a bit wider for my taste. Still, they're a massive step up from my old ones. Recommended, just one niggle.
Really nice set of knives, the santoku is a dream for chopping herbs. Only thing is the chef's knife is a bit on the heavy side for my liking. But overall brilliant quality for the price.
