Shikoku 7" Damascus Steel Kengata Santoku 三徳包丁
The Shikoku 7" Damascus Steel Kengata Santoku unites striking Japanese design with exceptional modern performance, crafted for chefs and home cooks who demand both beauty and precision.
67-Layer AUS10 Damascus Steel
At its core is premium AUS10 steel, clad in 67 layers of Damascus for superb hardness, edge retention and unique visual character. The intricate wave pattern is revealed in every layer, creating a blade that is as captivating as it is razor-sharp. Honed to a precise 8–12° cutting angle, it delivers effortless, scalpel-like precision through vegetables, meats and fish.
Rosewood Handle
The handle is shaped from richly grained rosewood, offering natural warmth and enduring strength. Its elegant contours and perfect balance provide a secure, comfortable grip, ensuring confident control during both delicate slicing and heavy chopping.
Kengata Blade Profile
The distinct Kengata (sword-tip) profile combines the versatility of a Santoku with the pointed precision of a Gyuto. This hybrid design makes it ideal for fine slicing, controlled rocking cuts and intricate knife work.

The Shikoku 7" Kengata Santoku is more than a kitchen tool. It is a statement of refined craftsmanship that transforms everyday cooking into an art form while bringing professional-level performance to your kitchen.

Warm water and mild soap after each use. Never put your knife in the dishwasher — the harsh detergents and jostling will damage the edge and handle.
Step 2 — Dry
Towel dry immediately. Don't leave it wet or in the sink — even stainless steel can develop spots if left damp.
Step 3 — Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer — it dulls the edge and is a safety hazard.
That's it — no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Decent knife for the money. Its sharp out the box, cuts veg no problem. I've used it for a few weeks now and it still holds an edge ok. The handle feels a bit plasticky to me if I'm honest, not as premium as I hoped. But it works fine, no complaints really, just not wowed. Might be better options at this price.
Ok so I've had this about 3 weeks now and I'm honestly chuffed with it. Massive upgrade from the old chef's knife I was using from Asda. The flat profile on the santoku style is brilliant for chopping - none of that rocking nonsense, just straight up and down. Handles garlic and herbs beautifully.
So I got this because I wanted something nicer than my cheap set from Argos. Its definitely an upgrade - cuts through onions and carrots with no effort. The weight is a bit more than I expected, I thought it might be lighter for a Japanese knife, but I actually prefer it now. Wish it came in a 9 inch option though, 8 inch is fine but sometimes I want a bit more blade for bigger veg.
Blimey, this thing is sharp. Like, properly sharp. Spent a few hours prepping veg for a big Sunday roast and it just glided through everything - onions didnt make me cry, tomatoes didnt squish, it was beautiful. The pattern on the blade is dead smart too, looks the business stuck to my magnetic strip. Cant fault it for the price at all.
Really good knife, does the job well. The blade is dead sharp and the pattern looks cool. My only tiny gripe is the handle shape took a bit of getting used to - its a bit angular where my old one was more rounded. But after a couple of days I got the hang of it. Slices veg like a dream. Would buy again.
Got this thinking it'd be a game changer compared to my old knives. Its better, don't get me wrong, but not massively. The cutting angle is nice, makes precise cuts easy enough. The blade is a bit thick behind the edge for my liking though, doesn't feel as laser-like as I thought it would. Its fine for general use but maybe overhyped for the price. Will use it but wouldn't buy again.
Honestly cant believe how sharp it is straight out the box. Used it to slice a pineapple and it went through the skin like butter. The handle is comfy too, good grip even when my hands are a bit greasy. Only had it a fortnight but so far so good. Arrived quick as well.
Got this for my husband as he's been getting into cooking more since we got that Ninja airfrier. He absolutely loves it, says it feels really solid in the hand but not too heavy. The edge retention seems proper good so far, been using it nearly every day for a month and still slices paper. Came nicely wrapped in a box too which was a bonus.
Its alright. Does the job but I'm not blown away by it or anything. The blade is sharp enough, cuts fine for everyday stuff like chopping onions and peppers. The damascus pattern is nice to look at I guess. I think for 70 quid I was expecting a bit more wow factor, feels similar to my old ProCook one in use. Probably keep it as a spare.
Been cooking Japanese food more lately and wanted a decent knife that wouldn't break the bank. This one fits the bill nicely. The AUS10 steel seems to hold its edge really well, done a whole batch of maki rolls without needing a sharpen. Its got a nice weight to it as well, feels balanced. Would defo recommend.
