Hikari 光 7" Damascus Steel Professional Santoku Knife 三徳包丁
This breathtaking 7" Hikari Damascus Santoku Knife is individually forged from 67-layer Japanese Damascus Steel with an HRC Rating as high as 62 for unparalleled hardiness and performance.
33-layers of Damascus on each side surround the Japanese VG10 Steel Core. Built to last and retain sharpness so that you will never need another santoku knife again.
The Hikari Santoku Knife features integrated full-tang moulding from blade to handle, which allows for increased force and leverage, making it useful against even the toughest of meats and vegetables.
The handle is perhaps our most practical and stunning handle design yet; it's a Pakka wood handle that is full of deep wooden colours, and will glisten beautifully in your kitchen.
The handle is also completely waterproof, heat-resistant, and non-slip, so it will feel absolutely wonderful in your hand. Finally, there is a Blossom Plum Rivet on the handle to enhance both the look and feel.
Achieve culinary perfection in style with the Hikari 7" Damascus Steel Professional Santoku Knife.
Crafted from professional-grade, heat-treated high-carbon steel, Shimeru Knives deliver exceptional sharpness, durability, and edge retention. From the first slice, you’ll experience the precision that sets us apart.
Our knives are guaranteed to be the sharpest you’ve ever owned. No exceptions, no compromises—just razor-sharp blades that elevate your culinary experience.
Shimeru Knives feature uniquely designed handles that not only add a sophisticated touch to your kitchen but also provide a comfortable, secure grip for effortless chopping and slicing.
With a double-bevel edge sharpened to 15°—compared to the standard 20-25° of most Western knives—our blades allow for smoother, faster cuts, enhancing your cooking efficiency by 2 to 3 times.
Not sure which knife?
Answer a few quick questions about how you cook, and we'll match you with the perfect blade.
Step 1 — Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher — the harsh detergents and jostling will damage the edge and handle.
Step 2 — Dry
Towel dry immediately. Don't leave it wet or in the sink — even stainless steel can develop spots if left damp.
Step 3 — Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer — it dulls the edge and is a safety hazard.
That's it — no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
cant believe how sharp this knife is. Its my first proper japanese knife and im converted. The handle is comfortable and it looks beautiful on the magnetic rack.
Knife is brilliant, razor sharp out of box. Only wish it came with a blade guard or sheath for storage. Had to buy one separately. But the knife itself is top notch.
Sharp as anything. Love the look of it. Makes me want to cook more just to use it.
The steel is excellent, holds an edge well. The handle material is fine but could do with a bit more texture for grip when hands are wet. Not a dealbreaker though.
Bought this for the wife, she's been wanting a decent santoku. She's over the moon, says it makes prepping dinner so much faster. The blade shape is perfect for her.
It's a decent knife, does the job. Sharp enough but I'm not blown away like some reviews said I would be. For £65 I expected a bit more refinement. The handle feels a bit cheap and the blade, while sharp, doesn't have that effortless feel of expensive Japanese knives. It's fine, just not special.
Got this for me dad for his birthday and he absolutely loves it. Says its the sharpest knife he's ever used. He's been showing it off to everyone.
The presentation box was a nice touch, felt like a proper gift. Knife itself is gorgeous and sharp. Bought another for my son.
The hardness is no joke, it's kept its edge through some hard use. But you do need to be careful not to twist the blade. Proper tool.
Came really well packaged, in a smart box. The knife itself is stunning, photos dont do it justice. Cuts through beef joint no problem.
