Kushiro 8.3" Damascus Steel Gyuto Knife 牛刀
Introducing the Kushiro 弓削川 8.3" Damascus Steel Gyuto Knife by Shimeru, a striking blend of traditional Japanese-inspired artistry and modern engineering. Crafted for both professional chefs and passionate home cooks, it delivers precision, balance and durability for every culinary challenge.
69-Layer Hammered Damascus Steel
The blade is forged from 69 layers of premium Damascus steel, creating a razor-sharp edge with remarkable strength and long-lasting performance. The hand-hammered finish not only showcases a mesmerising pattern unique to each knife but also reduces drag and minimizes food adhesion, ensuring smooth and effortless cutting.
Carbon Fibre Handle
The handle is crafted from sleek, jet-dark carbon fibre for a bold contemporary look and exceptional durability. Lightweight yet incredibly strong, it provides a secure, comfortable grip that resists moisture, heat and bacteria, making it ideal for both professional kitchens and home use.
Precision and Versatility
Perfectly balanced and honed to a fine cutting angle, the Kushiro glides through meats, fish and vegetables with ease. Its 8.3" blade length offers the reach and control needed for everything from intricate slicing to heavy-duty prep work.
Culinary Craftsmanship Elevated

Crafted from professional-grade, heat-treated high-carbon steel, Shimeru Knives deliver exceptional sharpness, durability, and edge retention. From the first slice, you’ll experience the precision that sets us apart.
Our knives are guaranteed to be the sharpest you’ve ever owned. No exceptions, no compromises—just razor-sharp blades that elevate your culinary experience.
Shimeru Knives feature uniquely designed handles that not only add a sophisticated touch to your kitchen but also provide a comfortable, secure grip for effortless chopping and slicing.
With a double-bevel edge sharpened to 15°—compared to the standard 20-25° of most Western knives—our blades allow for smoother, faster cuts, enhancing your cooking efficiency by 2 to 3 times.
Not sure which knife?
Answer a few quick questions about how you cook, and we'll match you with the perfect blade.
Step 1 — Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher — the harsh detergents and jostling will damage the edge and handle.
Step 2 — Dry
Towel dry immediately. Don't leave it wet or in the sink — even stainless steel can develop spots if left damp.
Step 3 — Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer — it dulls the edge and is a safety hazard.
That's it — no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Came really well packaged, delivery was quick. Knife itself is stonkingly sharp. The handle shape took a bit of getting used to, not as contoured as my old Wusthof, but after a week I don't notice. 4 stars cos I missed my old handle at first.
Birthday present for the wife, she loves it. Cuts like a dream. The packaging was nice too, came in a smart box. Proper impressive little number.
Bought this for me dad for his birthday, he's over the moon. The blade pattern is stunning, a real looker. He used it on a Sunday roast and couldn't stop going on about how nicely it sliced the beef. Well packed too, no issues with delivery.
Cant fault it honestly. Good weight, nice handle, and the damascus is beautiful. Brilliant knife for the money.
Bought this for the look more than anything, but it performs well. The handle is a bit plain though, would've been nice with a darker wood or some resin. Still, no complaints on sharpness or edge retention after a month.
Cuts beautifully, no issues with chipping. The blade profile is quite curved, so it's excellent for rocking cuts like chopping herbs. I just wish the spine was a bit thinner for fine onion slicing but it's not a biggy.
My first proper gyuto, huge upgrade from my supermarket knife. Only thing is I wish it came with a sheath or blade guard in the box. Had to buy one separate. Still a cracking knife that makes cooking more enjoyable.
It's a decent knife, don't get me wrong, but for £70 I was expecting a bit more heft and a nicer balance. The damascus finish is pretty but the handle material lets it down a bit, feels a bit cheap. It's sharp out the box, edge retention seems okay after a week. Cuts fine, but I've used cheaper Victorinox knives that felt more comfortable. I'll keep using it but I'm not as chuffed as I thought I'd be. Maybe I just set my expectations too high.
The knife arrived in perfect condition, well packaged. edge is ace. Only knocked a star cause the balance point is a smidge forward for me but my partner says its perfect. Just personal preference innit.
Good all-rounder, does everything I need. My only niggle is the handle could do with a bit more texture for grip when your hands are wet from washing veg. Nothing major, just a small thing. The blade itself is brilliant.
