Hakuba 白馬 8″ Damascus Steel Gyuto Chef Knife 牛刀
Introducing the Hakuba 白馬 by Shimeru, a premium 8″ gyuto knife that embodies strength, elegance, and masterful precision. Named after Japan's legendary "White Horse" mountain peaks, the Hakuba is forged for those who demand excellence in both form and function.
67-Layer Damascus Steel Precision At the core of the Hakuba lies a blade forged from 67 layers of premium Damascus steel with a VG10 cutting core, delivering exceptional sharpness, resilience, and edge retention. The mesmerising swirl pattern across the blade is unique to each knife, a hallmark of traditional Damascus craftsmanship. The hammered finish reduces surface friction, enabling seamless cuts through vegetables, proteins, and delicate ingredients alike.
Artisan Handle Craftsmanship The Hakuba's handle is a striking fusion of deep ocean-blue resin and natural lofidied wood, accented with an elegant brass mosaic pin. This bold combination creates a visual depth reminiscent of mountain forests meeting twilight skies. Beyond its beauty, the handle offers outstanding durability and moisture resistance, while the ergonomic shape provides a comfortable, secure grip that reduces fatigue during prolonged use.
Uncompromising Versatility With its perfectly balanced 8″ blade, the Hakuba gyuto excels across the full spectrum of kitchen tasks, from precision slicing and intricate dicing to confident chopping. The harmonious weight distribution ensures effortless control, making it equally suited to daily meal preparation and refined culinary creations.
Command Your Kitchen The Hakuba 白馬 8″ Damascus Steel Gyuto Chef Knife is more than an instrument—it is a declaration of intent. For chefs and home cooks who value artistry and performance in equal measure, the Hakuba will become the cornerstone of your kitchen, inspiring mastery with every cut.

SaleReally nice knife, feels solid and the sharpness is fantastic out of the box. My only minor thing is the handle shape, it's a bit more oval than I'm used to so took a day or two to get comfortable with. But overall a massive upgrade and I'm very happy with it.
Really nice knife, super sharp and looks the part. My only minor thing is the handle shape, it's a bit square for my grip but I'm getting used to it. Still a great knife.
Bought this for my husband who loves to cook, he's over the moon with it. He says the balance is perfect and the VG10 core means he doesn't have to sharpen it all the time. Makes quick work of onions and herbs. Honestly cant believe how good it is for the price.
Came really well packaged in a nice box, felt like a proper premium product. The knife itself is beautiful and performs even better. Holds an edge brilliantly.
I was after a proper chef's knife and this fits the bill. It's sharp out the box and the balance is spot on. Makes cooking much more enjoyable.
Used it to break down a whole chicken and it handled everything from the joints to the finer bits with ease. Really well balanced, feels like an extension of your hand.
So I got this to replace my old supermarket knife and the difference is unreal. The blade is so sharp it glides through tomatoes and the damascus pattern is gorgeous, looks way more expensive than it was. Been using it for a month now and it's still razor sharp, holds its edge brilliantly. Came in a nice box too.
Positive overall. The damascus finish is stunning and it's a joy to use for veg prep. I do wish it came in a 10 inch size as I have big hands and a bigger board, but for the 8 inch it's perfectly weighted and sharp. Arrived next day which was a bonus.
Arrived next day which was a bonus. Knife is stunning, the layers in the steel are mesmerising. Cuts like a dream, my new favourite in the kitchen.
Brilliant knife, exactly what I needed. Lovely edge on it.
Expected a bit more hype to be honest. It's a solid knife, looks good. But it's just a knife at the end of the day. Works well, no issues, but wouldn't rave about it.
Bought this after my cheap set fell apart. The difference is night and day. The VG10 core seems to stay sharp forever, haven't had to sharpen it yet after a month of daily use.
So I was a bit nervous spending this much on a knife but honestly its worth it. The weight is perfect, not too heavy. Makes chopping onions a dream, no more tears (well, less anyway).
It's a decent knife. Does the job. Was expecting to be a bit more wowed for the price if I'm honest. It's sharp and looks nice but doesn't feel that different from my last one.
My first proper Japanese knife and I'm converted. It's so precise. Great for slicing meat thinly. Lovely piece of kit.
Brilliant knife, exactly what I needed. Lovely edge on it.
Positive overall. The knife is beautiful and cuts brilliantly. I just wish it came in a slightly longer size, maybe a 9 inch, as I've got big hands. Still recommend it though.
It's alright. Used it for a couple weeks now. Holds an edge well but I found it a bit slippery when my hands were greasy. Does the job for most kitchen tasks.
Perfect weight for me, not too light not too heavy. The blade is a work of art and it performs just as good as it looks. Very happy with this purchase.
Lovely knife, performs well. It's a tad heavier than I was expecting but actually I think I prefer the heft now for chopping through harder veg. No complaints really.
Way better than the Procook set I had. This one feels substantial and the edge retention is phenomenal. The pattern is unique, really pretty.
Massive upgrade from my old supermarket knives. The Damascus pattern is gorgeous, looks even better in person. Cuts through tomatoes and peppers with no effort at all.
Great knife, edge is fantastic. The handle is nice but I think I would have preferred a darker wood colour, personal preference thing. Cuts everything I've thrown at it with ease.
Good but not great. The blade is pretty and it's sharp. Just feels a bit... standard? Maybe my expectations were too high. It's perfectly serviceable.
Absolutely love this knife. The pattern on the blade is stunning and it's so sharp, glides through veg like its nothing. Been using it for a few weeks now and it's still razor sharp, proper impressed.
