Suisen 水仙 7″ Damascus Steel Santoku Knife 三徳包丁
Introducing the Suisen 水仙 by Shimeru, a premium 7″ santoku knife that captures the iridescent beauty of Japan's beloved narcissus flower. With its mesmerising abalone shell handle, the Suisen is forged for those who believe a knife should be as captivating as the dishes it creates.
The blade is forged from 67 layers of premium Damascus steel with a VG10 cutting core, delivering exceptional sharpness, durability, and edge retention. The intricate wave pattern across the blade is unique to each knife, a hallmark of traditional Damascus craftsmanship. The hammered tsuchime finish reduces friction and prevents food from clinging, ensuring clean, effortless cuts through vegetables, proteins, and delicate ingredients alike.
The handle is crafted from genuine abalone shell resin, displaying an ever-shifting spectrum of blues, greens, and iridescent hues that catch the light with every movement. No two handles are identical, making each Suisen a truly unique piece. The ergonomic Western-style grip provides a secure, comfortable hold, while a decorative mosaic pin adds a refined finishing touch. Moisture-resistant and built for durability, this handle performs beautifully in the busiest kitchens.
At 7″, the Suisen santoku excels at the three essential cuts—slicing, dicing, and mincing. Its wide blade profile allows for easy scooping and transfer of ingredients, while the balanced weight provides agile, confident handling for both everyday meal preparation and ambitious culinary creations.
The Suisen 水仙 7″ Damascus Steel Santoku Knife is crafted for chefs who appreciate artistry as much as performance. A blade that brings colour, light, and inspiration to your kitchen, the Suisen will transform every cooking session into an experience to savour.
Crafted from professional-grade, heat-treated high-carbon steel, Shimeru Knives deliver exceptional sharpness, durability, and edge retention. From the first slice, you’ll experience the precision that sets us apart.

Step 1 — Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher — the harsh detergents and jostling will damage the edge and handle.
Step 2 — Dry
Towel dry immediately. Don't leave it wet or in the sink — even stainless steel can develop spots if left damp.
Step 3 — Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer — it dulls the edge and is a safety hazard.
That's it — no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Massive upgrade from my Victorinox. The VG10 core holds an edge way longer and the Damascus layers look gorgeous. Its a santoku so the flat profile is great for push cutting veg. Hand wash only though which is fine. Love it.
Got this for my missus birthday and she loves it. She said the handle looks like something from the sea, all iridescent and that. Cuts really well and feels balanced in the hand. Big upgrade from our old Ikea set. Came in a nice box too which was a bonus for wrapping up.
Ok so I was a bit sceptical about spending 60 quid on a knife but honestly its worth it. The Damascus pattern on the blade is stunning, each one must be different cause mines got a really cool wavy look. Used it to prep a Sunday roast and it made quick work of everything from onions to carrots. Really pleased.
Bit mixed on this one. On one hand its a good looking knife and the edge is nice out the box. On the other hand Ive used it for about a month and the edge has dulled quicker than I thought it would. Might need to get it sharpened soon. Handles ok but nothing special. Its alright for 60 quid just not blown away.
Blimey this thing is sharp. Took it out the box and it sliced through a tomato like it was butter. Ive had cheaper knives before but this is a proper step up. The handle is beautiful as well, really catches the light. Been cooking with it every day for a fortnight now and not had to sharpen it once.
Really good knife overall, very sharp and looks lovely with the patterns on the blade. The handle fits my hand alright but my girlfriend says its a bit slim for her grip. Still does the job perfectly though. Only wish it came in a 8 inch version cause I got used to a longer blade. But for the price its solid.
Brilliant knife. Lightweight but feels solid, the handle is comfortable to hold even after chopping loads of veg for a curry. The edge is still razor sharp after a month of regular use. My favourite kitchen tool now, cant believe I didnt get one sooner. Would reccomend to anyone.
Its a decent knife for the money but I was expecting a bit more from Damascus steel if Im honest. The blade is sharp enough and cuts fine but the handle feels a bit plasticky despite looking nice. Might just be me though. Does the job but not sure Id buy again.
Bought this on a whim and so glad I did. The abalone handle is really pretty, my mate thought it was some sort of resin art. Used it to slice up a big pumpkin and it went through with no effort. Sharp as anything out the box and feels quality. Nice weight to it.
Massive upgrade from my old supermarket knife. The weight and balance is just right, makes chopping feel effortless. The Damascus pattern is unique like they said, really does look like water. Been using it daily for a month now and it's still my favourite thing in the kitchen. Brilliant bit of kit for the price.
