Suisen 水仙 7″ Damascus Steel Santoku Knife 三徳包丁
Introducing the Suisen 水仙 by Shimeru, a premium 7″ santoku knife that captures the iridescent beauty of Japan's beloved narcissus flower. With its mesmerising abalone shell handle, the Suisen is forged for those who believe a knife should be as captivating as the dishes it creates.
The blade is forged from 67 layers of premium Damascus steel with a VG10 cutting core, delivering exceptional sharpness, durability, and edge retention. The intricate wave pattern across the blade is unique to each knife, a hallmark of traditional Damascus craftsmanship. The hammered tsuchime finish reduces friction and prevents food from clinging, ensuring clean, effortless cuts through vegetables, proteins, and delicate ingredients alike.
The handle is crafted from genuine abalone shell resin, displaying an ever-shifting spectrum of blues, greens, and iridescent hues that catch the light with every movement. No two handles are identical, making each Suisen a truly unique piece. The ergonomic Western-style grip provides a secure, comfortable hold, while a decorative mosaic pin adds a refined finishing touch. Moisture-resistant and built for durability, this handle performs beautifully in the busiest kitchens.
At 7″, the Suisen santoku excels at the three essential cuts—slicing, dicing, and mincing. Its wide blade profile allows for easy scooping and transfer of ingredients, while the balanced weight provides agile, confident handling for both everyday meal preparation and ambitious culinary creations.
The Suisen 水仙 7″ Damascus Steel Santoku Knife is crafted for chefs who appreciate artistry as much as performance. A blade that brings colour, light, and inspiration to your kitchen, the Suisen will transform every cooking session into an experience to savour.

SaleMassive upgrade from my old supermarket knife. The weight and balance is just right, makes chopping feel effortless. The Damascus pattern is unique like they said, really does look like water. Been using it daily for a month now and it's still my favourite thing in the kitchen. Brilliant bit of kit for the price.
Its a decent knife. Looks lovely and the handle is nice. Does the job fine chopping veg and that. Just not sure its that much better than some other knives I've had for less money, expected to be a bit more blown away for the price. It's good, just not amazing.
Bought this for my husband whos a bit of a foodie, he absolutely loves it. The abalone shell handle is the first thing he mentioned, said it looks amazing in the kitchen light. He's been using it for everything and says the edge is still razor sharp after a few weeks. Came in a nice box as well which was a nice touch for a present.
So i got this knife as a bit of a treat to myself and honestly its stunning. The pattern on the blade is proper beautiful, like a proper bit of craftmanship. Used it on some veg prep and it just glides through carrots and onions, no effort at all. Handle feels really secure in the hand too. Chuffed to bits with it.
Really nice knife overall, incredibly sharp out the box and the handle is comfortable. My only very minor thing is I wish the blade was a tiny bit taller, just a personal preference as I've got bigger hands. Still, it performs brilliantly on all the veg prep I've thrown at it and I'd definitely recommend it.
Way better than the Procook set I had. This one feels like a proper tool. The heft is just right and it sharpens up really nicely on the whetstone.
Lovely knife, the edge is fantastic. My minor gripe is I wish it came in an 8 inch option as I've got big hands and a slightly longer blade would suit me better. That said, it's brilliant for most tasks.
Been using this for a few weeks now, edge is still perfect. Makes prepping dinner so much quicker. The weight feels really good in the hand.
Great knife, performs really well. The handle is beautiful but it is a bit slick if your hands are greasy, just have to be mindful. Cuts beautifully though.
So impressed with this. Used it to break down a whole chicken and it handled everything from the joints to the fine slicing perfectly. Handle is really comfortable.
Bought this to replace an old one. It's a massive upgrade, sharp and sturdy. The box it came in was nice. Only reason it's not 5 stars is the balance feels a tiny bit more towards the handle than I'm used to, but it's not a problem.
Came really well packaged in a nice box. The knife itself is a piece of art, the abalone shell handle catches the light beautifully. Cuts brilliantly too.
I was a bit nervous buying a knife online but this is spot on. The flat profile of the santoku is great for how I chop. Cant believe how sharp it is straight out the box.
Really good knife, holds an edge well. The abalone shell is pretty. I guess I was just expecting it to feel a bit more 'special' for the price? But that's probably on me, it's a very good knife.
Bought this for my dad and he wont stop raving about it. He says its the best knife hes ever owned and the handle has a really secure grip even when wet.
Got this as a birthday present for my wife who loves cooking. She was over the moon with it, said the handle is beautiful and its a joy to use. Money well spent.
Really nice knife, super sharp and looks the part. Only giving 4 stars because the handle shape is a tiny bit square for my grip, takes a minute to get used to. Still a great bit of kit though.
Honestly chuffed with this purchase. The blade is stunning and it's just a pleasure to use every day. My partner keeps stealing it for his cooking too.
Arrived next day which was a bonus. Knife is lovely, really sharp and the handle is surprisingly comfortable. Feels like a much more expensive knife.
Brilliant knife, exactly what I needed. Lovely edge on it.
Solid knife, no complaints about performance. The pattern is lovely. I just personally prefer a slightly more rounded belly for a rocking chop, but for straight up and down chopping its perfect.
Does everything I need it to. Beautiful finish. Wish the handle had a bit more texture for grip, but it's not a deal breaker. Would recommend.
Used it to slice some smoked salmon and it was like using a razor, no tearing at all. Beautiful knife that performs as good as it looks.
It's a decent knife. Looks nice and it's sharp. But for nearly sixty quid I suppose I expected to be a bit more wowed? It does the job fine, chops veg alright, but it doesn't feel that different from my last one that cost half as much. It's good, just not great.
I’m really happy with the performance of this knife; it’s sharp and comfortable to use.
