Mizuki 瑞樹 7″ Damascus Steel Santoku Knife 三徳包丁
Introducing the Mizuki 瑞樹 by Shimeru, a premium 7″ santoku knife that celebrates the enduring beauty of natural craftsmanship. Named after the auspicious "flourishing tree," the Mizuki is forged for those who seek timeless elegance and dependable performance in every cut.
The blade is forged from 67 layers of premium Damascus steel with a VG10 cutting core, delivering exceptional sharpness, durability, and edge retention. The distinctive wave pattern across the blade is unique to each knife, a testament to traditional forging mastery. Honed to a precise 12° V-shape edge—significantly sharper than the 20–25° found on typical Western knives—the Mizuki glides effortlessly through vegetables, proteins, and delicate ingredients alike.
The handle is crafted from rich, polished rosewood with a full-tang triple-rivet construction, ensuring outstanding strength and balance. The ergonomic Western-style grip fits naturally in the hand, providing secure control and reducing fatigue during extended use. A decorative mosaic pin adds a refined finishing touch, while the smooth, streamlined contours make this handle as comfortable as it is beautiful.
At 7″, the Mizuki santoku excels at the three essential cuts—slicing, dicing, and mincing. Its wide blade profile allows for easy scooping and transfer of ingredients, while the balanced weight provides agile, confident handling for both everyday meal preparation and more ambitious culinary projects.
The Mizuki 瑞樹 7″ Damascus Steel Santoku Knife is crafted for those who value reliability and natural elegance. A blade built to flourish in your kitchen, the Mizuki will deliver precision and beauty for years to come.

SaleStep 1 — Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher — the harsh detergents and jostling will damage the edge and handle.
Step 2 — Dry
Towel dry immediately. Don't leave it wet or in the sink — even stainless steel can develop spots if left damp.
Step 3 — Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer — it dulls the edge and is a safety hazard.
That's it — no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Really like this knife, its sharp and well made. The only thing is the handle feels a bit slim for my hands but I've got big hands so it might not bother most people. Still performs great and would recommend.
Brilliant knife. Massive upgrade from the set we had from a supermarket. The handle feels nice in the hand and not too heavy at all. Cant believe how easy it is to get a fine dice on onions now.
Got this for my husband as a birthday gift, he's over the moon with it. Says the edge retention is brilliant compared to his old knives. The pattern on the blade is lovely too.
Its a decent knife for the price but I was expecting a bit more. The blade is sharp enough and the pattern looks nice but it doesn't feel as premium as I hoped. It does the job but I've had similar from a cheaper brand. Not bad but not blown away.
Absolute pleasure to use. The balance is spot on and its so sharp straight out the box. Makes prepping veg actually enjoyable. Highly recommend.
Been using it daily for about a month now and it's still razor sharp. Slices through tomatoes like butter and the flat profile on the santoku makes chopping herbs a doddle. Well packaged and arrived quick.
Bought this for my dad and he hasn't stopped going on about how sharp it is. He said the Damascus pattern is proper beautiful and its a joy to use. Came in a nice presentation box which was a bonus.
Ok so I was a bit nervous spending this much on a knife but its totally worth it. Used it to prep a whole Sunday roast and it handled everything from carrots to the chicken with ease. Looks stunning on the magnetic strip too.
Impressed with the quality. It's a bit heavier than my old santoku but I think I actually prefer the heft now. Cuts through tomatoes like a dream.
Been using this daily for a few weeks, it's brilliant. My only slight niggle is I find the flat spot at the heel a bit short for my rocking style, but for push cutting it's perfect.
