Mizuki 瑞樹 7″ Damascus Steel Santoku Knife 三徳包丁
Introducing the Mizuki 瑞樹 by Shimeru, a premium 7″ santoku knife that celebrates the enduring beauty of natural craftsmanship. Named after the auspicious "flourishing tree," the Mizuki is forged for those who seek timeless elegance and dependable performance in every cut.
The blade is forged from 67 layers of premium Damascus steel with a VG10 cutting core, delivering exceptional sharpness, durability, and edge retention. The distinctive wave pattern across the blade is unique to each knife, a testament to traditional forging mastery. Honed to a precise 12° V-shape edge—significantly sharper than the 20–25° found on typical Western knives—the Mizuki glides effortlessly through vegetables, proteins, and delicate ingredients alike.
The handle is crafted from rich, polished rosewood with a full-tang triple-rivet construction, ensuring outstanding strength and balance. The ergonomic Western-style grip fits naturally in the hand, providing secure control and reducing fatigue during extended use. A decorative mosaic pin adds a refined finishing touch, while the smooth, streamlined contours make this handle as comfortable as it is beautiful.
At 7″, the Mizuki santoku excels at the three essential cuts—slicing, dicing, and mincing. Its wide blade profile allows for easy scooping and transfer of ingredients, while the balanced weight provides agile, confident handling for both everyday meal preparation and more ambitious culinary projects.
The Mizuki 瑞樹 7″ Damascus Steel Santoku Knife is crafted for those who value reliability and natural elegance. A blade built to flourish in your kitchen, the Mizuki will deliver precision and beauty for years to come.

SaleImpressed with the quality. It's a bit heavier than my old santoku but I think I actually prefer the heft now. Cuts through tomatoes like a dream.
Been using this daily for a few weeks, it's brilliant. My only slight niggle is I find the flat spot at the heel a bit short for my rocking style, but for push cutting it's perfect.
Great knife. The VG10 core seems to hold an edge for ages. Used it to break down a chicken and it handled it fine, though i'd probably use a different knife for the bones next time. Handle is comfy. Overall really pleased.
It's a decent knife. Sharp when it arrived and looks nice. Not sure it's that much better than my old one to justify the price if I'm honest. Does the job though.
Really good value I think. The blade is stunning and it's very sharp. I find myself reaching for it over my other knives now. No real complaints.
So i've been after a proper santoku for ages and this is just perfect. The damascus pattern is stunning, really unique. Its so sharp out the box, glides through veg like butter. Been using it every day for a month and the edge is still spot on, holds up really well. My favourite knife in the kitchen now.
Bought this for my dad and he loves it. He said it's a bit lighter than he expected from the pictures but he actually finds that better for longer prep sessions.
Bought this for my husband who loves cooking. He was chuffed with it, said it's a massive upgrade from our old supermarket set. He did say he wishes it was maybe an 8 inch instead of 7, but he's used to it now and loves it. Came in a nice box too.
Cant believe how sharp it is, honestly. The flat profile is great for push cutting. My only minor gripe is its a tad heavier than i expected, but i dont mind it now, feels more substantial. Arrived next day which was a bonus.
Massive upgrade from the cheap supermarket santoku I had. The weight and the flat profile make chopping so much easier, especially with herbs. Really pleased.
Really nice knife, feels solid and looks the part. Makes chopping onions a dream. Only thing is the handle shape is a bit different to my old one, took me a day or two to get used to it. But yeah, great bit of kit for the money.
Ok so it's fine. Cuts well enough and the handle is okay. I was expecting to be more wowed for the money. It's good, not great. Probably wouldn't buy it again.
The knife is beautiful and performs even better. I was worried about the VG10 core being hard to sharpen but it's held its edge for ages with just a honing rod.
Absolutely love this knife. The pattern on the blade is stunning and its so sharp, glides through veg like its nothing. My new favourite in the kitchen.
Solid performer. The VG10 core seems to hold an edge well. I do wish the handle had a bit more texture or something for grip, but it's a minor point on an otherwise excellent knife.
Very pleased overall. It's a proper sharp knife that looks the part. I suppose I thought the Damascus pattern would be a bit more pronounced, but that's just aesthetics. Cuts great.
Beautiful finish and incredibly sharp. Does exactly what you'd want. I think for the price I was maybe expecting a saya or cover, but it came in a decent box so can't complain really.
Knife is great, cuts beautifully. The pattern is unique which is cool. It's a tad more forward-heavy than I'm used to but it's not a problem, just different.
Used it to prep a sunday roast, made quick work of all the veg and the parsnips. The edge retention seems great, haven't had to sharpen it yet. Lovely bit of kit.
Really nice knife, the sharpness is fantastic out the box. My only minor thing is the handle shape, it's a bit round for my grip but I'm getting used to it. Still a great buy.
It's alright. The blade is pretty and it's sharp. I find it a bit light for my liking, prefer something with more heft. Does what it says on the tin, just didn't blow me away.
Got this for my husband and he won't let anyone else use it. Says it's the perfect size for most jobs and the handle is really comfortable, even with wet hands.
Does the job brilliantly. The santoku shape is perfect for how I cook. Maybe the spine could be a bit more rounded for comfort during long use, but it's not a dealbreaker.
Bought this as a gift for my partner who loves cooking. He was over the moon with it, says the balance is perfect and the edge is incredible. Came in a nice box too.
Cant believe how good this is for the price. I've been using it for a month now and it's still razor sharp. The handle feels really solid in the hand.
