Introducing the Hayama 葉山 by Shimeru, a premium 7″ santoku knife that draws inspiration from the lush, forested hillsides of Japan's coastal retreat. The Hayama combines striking visual depth with exceptional cutting performance, forged for chefs and home cooks who demand both beauty and precision.
The blade is forged from 67 layers of premium Damascus steel with a VG10 cutting core, delivering outstanding sharpness, durability, and edge retention. The intricate wave pattern across the blade is unique to each knife, a hallmark of traditional Damascus craftsmanship. The hammered tsuchime finish reduces friction and prevents food from clinging, ensuring clean, effortless cuts through vegetables, proteins, and delicate ingredients alike.
The handle is a captivating blend of smoky resin and natural burl wood, creating depth and movement reminiscent of forest shadows at twilight. A decorative mosaic pin adds a refined accent, while the ergonomic Western-style grip provides comfort and secure control. Moisture-resistant and built for durability, this handle is designed to perform in the busiest kitchens.
At 7″, the Hayama santoku excels at the three essential cuts—slicing, dicing, and mincing. Its wide blade profile allows for easy scooping and transfer of ingredients, while the balanced weight provides agile, confident handling for both everyday meals and ambitious culinary projects.
The Hayama 葉山 7″ Damascus Steel Santoku Japanese Chef Knife is crafted for those who appreciate artistry and performance in equal measure. A blade that brings depth, precision, and quiet elegance to your kitchen, the Hayama will inspire creativity with every cut.

SaleDoes the job brilliantly, sharp and good looking. Handle is comfortable but I think I'd prefer a darker wood colour to match my others. Still, would recommend.
Absolutely love this knife. The pattern on the blade is stunning and its so sharp, glides through veg like its nothing. My new favourite in the kitchen.
Really lovely knife, the sharpness is fantastic and it feels solid. My only very minor thing is the handle shape, it's a bit different to what I'm used to so took a day or two to get comfortable with it. Still a great buy though.
Used it to break down a whole chicken last weekend and it handled everything from the joints to the fine slicing. The flat profile is great for chopping. Arrived next day which was a nice surprise. Very happy with it.
So I've been using this for a few weeks now and honestly it's brilliant. The edge is still razor sharp, makes prepping veg for dinner a doddle. The pattern on the blade is gorgeous too, proper bit of kit.
Bought this for my dad who's a bit of a foodie. He said its the best present he's had in years, loves the craftsmanship. Looks the business in his kitchen.
Got this as a birthday present for my wife who loves cooking. She was over the moon with it. She says it's perfectly balanced and the handle feels really nice in her hand. Came in a nice box as well which was a bonus.
Massive upgrade from my old supermarket knife. The difference is night and day, it just glides through onions and tomatoes. Cant believe how sharp it is. Looks the part on the magnetic strip too.
Its a decent knife. Does what its supposed to, sharp enough and looks nice. Just not blown away by it if I'm honest, feels a bit like any other good santoku I've used. Expected a bit more for the price maybe. Its fine, just not amazing.
Massive upgrade from my old supermarket santoku. The weight and the flat profile make chopping so much easier, no more rocking about. Couldnt be happier.
Bought this on a bit of a whim and so glad I did. Its just a joy to use, makes cooking feel more professional. Handle is comfy, blade is ridiculously sharp out the box.
Came really well packaged in a nice box. The knife itself is a work of art, the damascus pattern is different to the pictures online but in a good way, more depth to it. Cuts brilliantly.
Lovely knife. Does everything my more expensive gyuto does but in a smaller package. Great for finer work. Very pleased.
So sharp. Honestly cant believe how sharp it is for the price. Sliced a tomato paper thin first go. Handle has a nice secure feel to it.
Really good value for money. Cuts like a dream. Only thing is the finish, while beautiful, shows fingerprints and water spots really easily. Have to keep it dry. Small thing really, its a great knife.
Got this as a birthday present for my wife who loves cooking. She was over the moon with it, says the balance is perfect and it looks beautiful on the magnetic strip.
Been using this for a few weeks now, mainly for veg prep. The edge is still razor sharp, holds up really well. Great value for a proper Japanese knife.
Positive overall. The edge retention is excellent as you'd expect from VG10. I just find the flat profile means I have to lift the knife more when chopping, I'm more used to a curve. Its a good knife though.
Impressed with how it keeps its edge. I've done a lot of prep with it and it's still slicing perfectly. The damascus is a nice touch, makes it feel special.
Perfect size for my small hands. I was worried a 7 inch would be too big but its spot on. Great for all the general kitchen jobs.
The blade is just beautiful, each one is unique apparently. Cuts really well, nice and thin behind the edge so it doesn't wedge in carrots or anything.
The finish on the blade is gorgeous, you can see the hammer marks. Its not just pretty though, cuts through onions without making you cry as much. Arrived next day which was a bonus.
Great knife, love using it. The blade is a bit heavier than I expected from a santoku but I actually prefer it now, gives you a bit more control. Just took a day or two to adjust.
Exactly what I needed. My old knife was rubbish, this is in a different league. Sharp, good weight, looks the part.
Really nice knife, cuts beautifully and looks fantastic. Only reason its not 5 stars is the handle shape took a bit of getting used to for me, its a bit more oval than I'm used to. Still a great bit of kit though.
