Yamato 7" Damascus Steel Nakiri Knife 菜切り包丁
Shimeru presents the Yamato 大和川 Damascus Steel Knife Set, a collection that embodies the pinnacle of Japanese craftsmanship and precision. Hand-forged by a Master Blacksmith, this set combines 67 layers of finely crafted Damascus steel with luxurious sandalwood handles, offering a premium feel and unrivaled functionality in your kitchen.
Exquisite Craftsmanship: Each knife begins its journey under the strike of a belt hammer, followed by an engineering hammer used on an anvil to straighten and realign the blade, ensuring a flawless structure free from imperfections. This meticulous process culminates in a final quenching, resulting in an extraordinary hardness of 62:64 HRC. The blades are crafted to deliver the precision of a surgeon’s scalpel, with ultra-thin, light constructions that slice effortlessly while being easy to re-sharpen.
Luxurious and Functional Handles: The handles are skillfully crafted from sandalwood, known for its beauty and durability. This material not only complements the intricate Damascus steel patterns but also ensures a comfortable grip, promising finesse and control in every cut.
Complete Culinary Collection: The Yamato Knife Set offers a comprehensive range of tools to meet all your culinary needs.
Care and Maintenance: Crafted from traditional carbon steel, each blade must be washed, dried, and oiled immediately after use to prevent excessive oxidation, ensuring the longevity and performance of your investment.
Elevate your culinary experience with the Yamato 大和川 Damascus Steel Knife Set, a testament to the legacy of masterful Japanese craftsmanship, offering unmatched performance and aesthetic elegance in one luxurious package.
Yamato 7″ Nakiri Knife 菜切り包丁: Optimized for vegetable preparation, offering clean, precise cuts.
Crafted from professional-grade, heat-treated high-carbon steel, Shimeru Knives deliver exceptional sharpness, durability, and edge retention. From the first slice, you’ll experience the precision that sets us apart.
Our knives are guaranteed to be the sharpest you’ve ever owned. No exceptions, no compromises—just razor-sharp blades that elevate your culinary experience.
Shimeru Knives feature uniquely designed handles that not only add a sophisticated touch to your kitchen but also provide a comfortable, secure grip for effortless chopping and slicing.
With a double-bevel edge sharpened to 15°—compared to the standard 20-25° of most Western knives—our blades allow for smoother, faster cuts, enhancing your cooking efficiency by 2 to 3 times.
Not sure which knife?
Answer a few quick questions about how you cook, and we'll match you with the perfect blade.
Step 1 — Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher — the harsh detergents and jostling will damage the edge and handle.
Step 2 — Dry
Towel dry immediately. Don't leave it wet or in the sink — even stainless steel can develop spots if left damp.
Step 3 — Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer — it dulls the edge and is a safety hazard.
That's it — no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Bought this collection for a friend and they love it. The fit and finish is good, edges are sharp. I did notice one of the blades had a tiny mark on the steel but it wiped off no problem. Probably just manufacturing residue. Good value set overall
These knives are a solid upgrade from my old set. Theyre quite light compared to what I was used to, which took a bit of adjusting, but now I appreciate it for quick prep. The nakiri is ace for veg. Would recommend if you dont mind a lighter feel
Really nice set overall, the blades are sharp and the damascus pattern is lovely. Only markdown is the handles are a tad slim for my hands — took a week or so to get used to. But the performance is spot on. Would buy again
These knives have transformed my Sunday roasts. The carving knife in the set makes short work of the joint and the nakiri handles the veg prep no problem. Really comfortable handles, good weight to them. Money well spent
Got the Yamato set for my wife and shes over the moon. The nakiri blade is her favourite for chopping veg but I quite like the gyuto for prep work. Lovely sharp edges out the box and they look stunning on the block. Really well packaged too.
Great knives for the price. The set looks professional and cuts like a dream. My only gripe is I wish there was a larger chefs knife option — the gyuto is nice but I prefer something with a bit more length for big veg. Still, brilliant for everyday use
Bought as a gift for my son whos just got into cooking. He rang me straight away to say how impressed he was with the set. Says the santoku is his go-to for everything. Nice presentation box too which was a bonus for gifting
So I finally upgraded from my old set and these are brilliant. The Damascus pattern is really nice to look at but its the sharpness that got me. Used the small paring knife for trimming and the chefs knife for slicing — felt like a pro. Cant believe I waited so long
Im not one to write reviews but these deserve it. Been using them daily for about a month now and theyve held their edge brilliantly. The nakiri is my favourite — glides through onions like nothing. Massive upgrade from the supermarket knives I had
Honestly, these are the best knives Ive ever owned. The set covers everything I need — the petty for small jobs, the gyuto for bigger cuts. They look gorgeous on the magnetic strip too. Cant fault them
