Dark Grain 9.5" Damascus Steel Kiritsuke Knife 切り付け包丁
Unleash your inner chef with the Dark Grain 9.5" Damascus Steel Kiritsuke Knife, a blade that turns everyday cooking into a performance of skill and elegance. From its intricate Damascus patterns to the warm, polished tones of its handle, this knife invites you to create with the poise of a professional.
A Blade of Exquisite Precision
Forged from 67 layers of premium Damascus steel, the blade reveals a hypnotic, one-of-a-kind wave pattern that reflects both strength and artistry. Hand-polished to a flawless mirror finish and sharpened to a razor 8–12° edge, it glides effortlessly through vegetables, fish, and meats. Each slice is a moment of precision, each cut a statement of mastery.
Ebony and Warmwood Handle
The handle blends dark, lustrous ebony with a striking band of warm natural wood. This pairing creates a subtle contrast of deep espresso and golden grain, giving the knife an air of understated luxury. Perfectly contoured for comfort and balance, it rests naturally in your hand, letting you move with control and confidence.
Effortless Performance
A delicate hammered finish on the upper blade reduces food adhesion, allowing ingredients to release cleanly and making each movement smoother. Its ideal weight and balance bring a chef’s sense of grace to every preparation—from finely slicing herbs to carving a centerpiece roast.
A Centerpiece of Culinary Art
The Dark Grain 9.5" Damascus Steel Kiritsuke Knife is more than a kitchen essential; it is a celebration of craftsmanship and style. Place it on display and it commands attention. Pick it up and it rewards you with chef-level precision and the satisfying feel of a truly exceptional blade.

Sold OutStep 1 — Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher — the harsh detergents and jostling will damage the edge and handle.
Step 2 — Dry
Towel dry immediately. Don't leave it wet or in the sink — even stainless steel can develop spots if left damp.
Step 3 — Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer — it dulls the edge and is a safety hazard.
That's it — no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
I love the blade on this, its sharp and holds an edge. The kiritsuke shape is growing on me. Bit heavier than I expected though, my wrist aches if I'm prepping a lot. But the quality is undeniable.
Bought this for myself after a promotion. The damascus pattern is hypnotising honestly. I find myself just looking at it. Does a cracking job on fish, that tip is perfect for getting into the bones. Love it.
Really good knife overall. The damascus cladding is stunning and it cuts very well. My only slight issue is the handle is a touch small for my hands so it gets a bit uncomfortable after a long session. Still, for the price I can live with that.
Ok so I treated myself to this kiritsuke after using a cheap santoku for years. Massive upgrade. The weight and balance feel just right for me. Slice an onion paper thin with no effort. The pattern on the blade is really eye catching.
Beautiful knife, really sharp out the box. The balance is more blade-heavy than I'm used to but I'm adjusting. I think if you have big hands it might feel a bit off. Otherwise, superb.
Great knife for the money. The blade is really well made and the pattern is beautiful. The handle took a bit of getting used to because it's quite smooth and I prefer a bit of texture, but now I'm used to it its fine. Delivery was quick.
Wife got me this for our anniversary (I dropped hints). Its a thing of beauty. Used it to break down a whole chicken and it went through joints like nothing. Cleaning it is a dream, the mirror finish just wipes clean. Chuffed to bits.
Had my eye on a kiritsuke for ages and this one didnt disappoint. The 67 layers look incredible in the light. Cuts through herbs without bruising them which I find is a real test. Would recommend to any home cook.
bought on a whim because I liked the look of it, turned out to be a brilliant knife. The sharpness out the box is mental. Been cooking a lot more just to use it. Packaging was good too, no damage.
Bought as a gift for my son who's a chef. He says its a decent knife and uses it regularly. He did mention he'd prefer a rounder handle profile but admitted the steel quality is very good. Happy with the purchase.
