Warm water and mild soap after each use. Never put your knife in the dishwasher, the harsh detergents and jostling will damage the edge and handle.
Step 2, Dry
Towel dry immediately. Don't leave it wet or in the sink, even stainless steel can develop spots if left damp.
Step 3, Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer, it dulls the edge and is a safety hazard.

Really nice blade, holds its edge proper well. I use it daily for veg prep and it glides through everything. Only thing is I wish they did a slightly longer version – this is 8 inch but I'm used to a 10 inch chefs knife so it feels a tad short for some jobs like slicing big melons or cabbage. Not a deal breaker though, I'd still buy it again. The handle is nice in the hand, no complaints there.
Got this for my partner who's the cook in the house. He absolutely loves it. The damascus pattern is even nicer in person, really catches the light. We've had it a few weeks now and it's still razor sharp – made quick work of a beef joint on Sunday. Handle is comfy, nice weight to it. Came in a posh box as well which was a nice touch. For £75 its a bit of a steal honestly.
Got this for my husbands birthday as he's been wanting a decent kiritsuke for ages. The blade is stunning, the damascus pattern is proper lovely. He's used it for everything from delicate fish slicing to breaking down a chicken and it's held its edge brilliantly. Only thing he mentioned is the handle shape took a few weeks to really get comfortable with, it's a bit more oval than what he's used to. Once you adapt to it though it's solid. Came in a nice box too which was a bonus.
Lovely knife. Feels really balanced in the hand and the flat profile makes push-cutting a joy. Only gripe is I'd have preferred it in a 9 inch version, this one's just a touch short for my liking. Still a proper good blade for the money.
Got this for my birthday and its a beaut. The blade is mental sharp straight out the box, goes through toms like theyre not even there. The damascus pattern is even nicer in real life, photos dont do it justice. Feels lovely in the hand, not too heavy or light. Only had it a week but so far its brilliant.
Bought this for the wife who fancies herself a bit of a chef. Shes been wanting a proper kiritsuke for ages so got this as a surprise. Came really nicely boxed up which was a nice touch. Shes over the moon with it - says the AUS10 steel holds an edge like nothing else shes used. Been doing all sorts with it, veg, boneless meats, even slicing up a big bit of salmon for sushi at the weekend. The handle is proper comfy, the wood grain is lovely and its got a nice weight to it. Took her a couple of days to get used to the flat profile but now she prefers it. Makes her old knives feel like toys. For 75 quid its a cracking bit of kit.
Brilliant knife, exactly what I needed. Lovely edge on it. Did a whole chicken and it just glided through the joints. Feels solid but not too heavy. Delivery was dead quick too.

Great quality for the money. The AUS10 holds up well. My only slight niggle is that the blade is a bit shorter than my usual 10' chef's knife, so I sometimes have to adjust for larger veg. But it's a minor thing. Works great for precision work. I'd still recommend.
