Hikari 8" Damascus Steel Kiritsuke Knife 切り付け包丁
Illuminate every slice with the Hikari 8" Damascus Steel Kiritsuke Knife, an instrument of both art and performance for those who want to cook like a master chef at home. From its swirling Damascus patterns to the deep, lustrous wood of its handle, every detail speaks of elegance and precision.
67-Layer AUS10 Damascus Brilliance
At the heart of the Hikari is a core of premium AUS10 steel, encased in 67 layers of Damascus to create a blade of exceptional strength and striking beauty. Each ripple in the steel is unique, forming a mesmerizing pattern that draws the eye before the first cut is made. Hand-polished to a mirror finish and honed to a razor-sharp 8–12° edge, it delivers effortless, scalpel-like performance and maintains its keen edge through countless preparations.
Ebony Wood Handle
The handle’s jet-dark ebony wood provides a refined, natural elegance and a luxurious contrast to the luminous steel. Its smooth, fine-grained and perfectly balanced octagonal profile gives a secure, comfortable grip that invites confident, controlled movements, whether finely slicing vegetables or carving a centrepiece roast.
Effortless Cutting, Chef-Level Control
A subtle hammered finish near the spine reduces food adhesion, ensuring ingredients release cleanly and each motion flows smoothly. The perfect weight distribution gives you the agility and precision of professional cutlery, allowing every cut to feel both powerful and graceful.

Sold Out
Sold OutIt's a decent knife. Does the job, looks nice on the magnet strip. Sharp out the box. I suppose I was expecting a bit more for the money? It's fine, I use it. But it doesn't feel like a massive leap from my old one which was half the price. Maybe my expectations were too high. It's good, just not amazing.
Bought this for my husband who loves cooking Japanese food. He was over the moon with it. Said the balance is brilliant and the kiritsuke shape is really versatile for the way he chops. It came in a nice box too which made it feel like a proper present. He wont stop going on about how sharp it is, says it makes prep so much quicker.
Used it to prep a massive veg stew, hand didn't get tired at all. Great knife for the money.
Massive upgrade from the cheap supermarket set I had. The weight is just right and it holds an edge brilliantly. Very happy with this purchase.
The kiritsuke shape is really versatile, I use it for almost everything now. Lovely piece of kit.
Came really well packaged in a nice box. First proper knife I've owned and it makes prepping veg a joy, glides through onions like they're not even there.
So I got this to replace my old block set and wow, what a difference. The weight is perfect, feels really solid in the hand. The pattern on the blade is gorgeous, proper showpiece. I've used it on everything from veg prep to slicing up a roast and it just glides through. Edge is still razor sharp after a month of daily use. My favourite bit of kit in the kitchen now.
Cant believe how good this is for the price. The damascus finish is stunning, looks way more expensive. Handle is comfy, not too big. Used it to break down a whole chicken last weekend and it handled the joints and delicate bits no problem. Arrived next day which was a bonus. Really chuffed with it.
Really nice knife overall. The steel is great, holds an edge well and it's a beautiful thing to look at. My only thing is the handle shape, it's a bit more oval than I'm used to so took a few sessions to get a proper feel for it. Once I did, it's been brilliant. Just a personal preference thing really. Would definitely recommend.
Solid knife, good value. The edge is fantastic. I suppose I was just expecting it to feel a bit more 'special' in the hand for some reason? Still, would recommend.
Does exactly what it says on the tin. Sharp, good looking, feels quality. What more do you want.
Been using it daily for about a month now and its still razor sharp. The AUS10 steel seems top notch. My favourite knife in the block now.
Great blade, holds an edge well. I do wish it came in a slightly longer version, maybe a 9 inch, as I've got big hands. Still a brilliant knife though.
Handle has a lovely deep colour to it, feels warm not like cheap plastic. Knife is perfectly balanced.
Impressive bit of kit. Razor sharp and the Damascus is gorgeous. Only thing is I find myself reaching for a smaller petty knife for finer work, but as an all-rounder its excellent.
Arrived quickly and well protected. The blade pattern is mesmerising, everyone who sees it comments on it. Cuts like a dream too.
Bought this after reading up on kiritsuke knives. Love the hybrid shape, works great for both rocking and push cuts. Arrived next day which was a bonus.
Way better than the Procook set I had. The tip is really precise for shallots and garlic. Very pleased.
Really nice knife, super sharp and looks the part. Only reason not 5 stars is the handle shape took a day or two to get used to, its a bit squarer than my old one. But I like it now.
Got this as a birthday present for my partner who loves cooking. He was over the moon, said the balance is perfect and the handle feels really solid.
The Damascus finish is even nicer in person, photos dont do it justice. Used it to fillet a salmon and it was effortless.
My first proper Japanese knife. The edge is incredible, slices tomatoes paper thin. No complaints at all.
Very happy with it overall. The finish is beautiful and it cuts brilliantly. It is a tad heavier than I expected but thats not necessarily a bad thing, gives it a solid feel.
This knife is sharp, sturdy, and a pleasure to use.
Lovely knife, does everything I need. My minor gripe is I'd have preferred a darker wood handle to match my others, but thats just personal preference. Performance is top.
