Hikari 8" Damascus Steel Kiritsuke Knife 切り付け包丁
Illuminate every slice with the Hikari 8" Damascus Steel Kiritsuke Knife, an instrument of both art and performance for those who want to cook like a master chef at home. From its swirling Damascus patterns to the deep, lustrous wood of its handle, every detail speaks of elegance and precision.
67-Layer AUS10 Damascus Brilliance
At the heart of the Hikari is a core of premium AUS10 steel, encased in 67 layers of Damascus to create a blade of exceptional strength and striking beauty. Each ripple in the steel is unique, forming a mesmerizing pattern that draws the eye before the first cut is made. Hand-polished to a mirror finish and honed to a razor-sharp 8–12° edge, it delivers effortless, scalpel-like performance and maintains its keen edge through countless preparations.
Ebony Wood Handle
The handle’s jet-dark ebony wood provides a refined, natural elegance and a luxurious contrast to the luminous steel. Its smooth, fine-grained and perfectly balanced octagonal profile gives a secure, comfortable grip that invites confident, controlled movements, whether finely slicing vegetables or carving a centrepiece roast.
Effortless Cutting, Chef-Level Control
A subtle hammered finish near the spine reduces food adhesion, ensuring ingredients release cleanly and each motion flows smoothly. The perfect weight distribution gives you the agility and precision of professional cutlery, allowing every cut to feel both powerful and graceful.
A Statement of Culinary Luxury
The Hikari 8" Damascus Steel Kiritsuke Knife is more than a kitchen tool, it is a centrepiece of modern craftsmanship and timeless artistry. Display it proudly and let it inspire bold, beautiful cooking that turns every meal into a masterpiece

Sold OutStep 1 — Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher — the harsh detergents and jostling will damage the edge and handle.
Step 2 — Dry
Towel dry immediately. Don't leave it wet or in the sink — even stainless steel can develop spots if left damp.
Step 3 — Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer — it dulls the edge and is a safety hazard.
That's it — no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Brilliant knife, exactly what I needed. Lovely edge on it. Did a whole chicken and it just glided through the joints. Feels solid but not too heavy. Delivery was dead quick too.
Been using it for about a month now, still hasn't needed a sharpen. I'm a home cook, nothing pro, and it deals with everything I throw at it. From delicate herbs to hard veggies. The exposed tang at the end is a nice detail. Really pleased.
I was a bit sceptical at this price but honestly it feels like a much more expensive knife. The AUS10 steel holds an edge brilliantly. The damascus cladding is not just for show, it adds a proper solid feel. Used it for everything from veg prep to carving the Sunday roast.
Great quality for the money. The AUS10 holds up well. My only slight niggle is that the blade is a bit shorter than my usual 10' chef's knife, so I sometimes have to adjust for larger veg. But it's a minor thing. Works great for precision work. I'd still recommend.
Bought this for myself as a treat and I have to say it's the best kitchen investment I've made. My old Victorinox was ok but this is another league. Slices tomatoes so thin you can see through em. I'm no chef but I feel like one using this.
Really good knife, very sharp and beautiful. Only thing is it's slightly heavier than I'm used to, but I'm getting the hang of it. Handle is comfortable and it stays sharp ages. Would prefer a slightly longer blade option but this does the job.
Ive been a chef for 12 years and this knife really impressed me. For home use it's absolutely perfect. The AUS10 is easy to sharpen and takes a wicked edge. The thin blade geometry means it feels light on the board. The handle is comfortable and looks classy.
The balance of this knife is spot on. I've used some that are handle heavy but this feels neutral. The wood handle has a slight texture that gives good grip even when oily. Edge out of the box was impressive, but I gave it a quick strop and now it's insane.
The knife arrived next day which was a bonus. Took it out and wow, it's even nicer in person. The damascus has a sort of 3D effect. Tried it on carrots, celery, onions, nothing stood a chance. Very pleased with the purchase.
It's a really solid knife for the money. The box it comes in is nice enough to gift. My mate came round and thought I'd spent a fortune on it. It's been through the dishwasher once (yes I know, don't shout) and came out fine, but I hand wash it now. Still sharp.
