Yubetsu 8.5" Kiritsuke Knife 切り付け包丁
Experience the perfect harmony of beauty and performance with the Yubetsu 8.5" Kiritsuke Knife, a blade designed to make every home chef feel like a culinary professional. From its striking hammered finish to the rich, polished tones of its handle, every detail is crafted to inspire confidence and elevate your cooking ritual.
Exquisite Blade Craftsmanship
The razor-sharp edge is hand-finished to a mirror polish and honed to a precise 8–12° angle, delivering scalpel-like precision for everything from fine vegetable work to carving meats. The subtle hammered texture not only adds visual drama but also reduces food adhesion, allowing ingredients to release effortlessly with each slice.
Mkuruti Wood Handle Elegance
The handle is crafted from richly grained Mkuruti wood, prized for its natural depth of color and distinctive marbling. Its warm, smooth surface offers a secure, comfortable grip, while the faceted profile provides excellent balance and control for precise, confident movements whether slicing fish for sashimi or carving a roast.
Where Tradition Meets Modern Design
Created through a careful blend of time-honored hand-finishing and modern techniques, the Yubetsu embodies the exacting standards of professional cutlery. Its poised weight and perfect balance turn everyday chopping into an art form, making every meal preparation a rewarding experience.

SaleStep 1, Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher, the harsh detergents and jostling will damage the edge and handle.
Step 2, Dry
Towel dry immediately. Don't leave it wet or in the sink, even stainless steel can develop spots if left damp.
Step 3, Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer, it dulls the edge and is a safety hazard.
That's it, no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Got this for myself after eyeing it for a while. The edge on this thing is mental, went through an onion like butter. Love the hammered finish too, looks proper smart in the kitchen. Not too heavy either which I was worried about. Cheers!
Ok so i got this for myself after using a old supermarket santoku for years and honestly its night and day. The blade holds its edge really well and ive been using it pretty much every meal for a month now. The flat profile is great for chopping veg and the tip is dead useful for finely slicing garlic and stuff. The handle looks a bit flashy in the photos but in person its actually quite understated, fits my hand nice. Only slight thing is i thought itd be lighter but i actually prefer it now, feels more controlled. Came really well packaged too, no complaints.
got this for my dads birthday, he's been after a decent kiritsuke for ages. he reckons it's brilliant, the edge is scary sharp and the hammered finish looks proper smart. I had a go meself and it sliced through a carrot like butter. Really nice weight to it as well, feels quality. Delivery was quick too, came in a nice box.
Got this on a bit of a whim cause I fancied something that looked a bit special on the magnetic rack and honestly it’s become my go-to. The hammered finish is lovely in person, pictures dont do it justice. Used it for everything from finely slicing spring onions to carving a roast chicken and it just glides through. The edge is insane, shaved a bit of arm hair to test it (stupid, I know) and it was effortless. Handle feels really nice and balanced, much better than my old supermarket block set. For £55 I’m well chuffed.
bought this for me dad for his birthday as he’s been getting into cooking more. He proper lit up when he saw it, the box it came in was actually quite posh so made a nice gift. He used it straight away to prep veg for a sunday roast and rang me later to say it’s the sharpest knife he’s ever owned. Bit of a bargain if you ask me, looks way more expensive than it is. Might have to get one for meself now.
Ok so I bought this kiritsuke on a whim cos it looked really pretty. The blade is stunning, no lie, and it slices through veg like nobodys business. Only thing is the flat profile took me a few goes to get used to, kept wanting to rock it like a gyuto. Not a fault of the knife at all just me being thick. Would def recommend if you want something a bit different. Just wish it came in an 9 or 10 inch version cause this one feels a tad short for bigger jobs.
got this for me dad for his birthday, he's been banging on about wanting a proper jap knife for ages. first thing he said was it's a bit heavier than his old one but now he reckons it makes chopping feel more controlled. blade looks the business with that hammered effect and its proper sharp. only reason not 5 stars is I wish it had a bit more of a traditional handle feel, this ones nice but feels a bit modern if that makes sense. still a cracking knife for the money.
Honestly, I was a bit sceptical at this price but it's fantastic. The edge is so fine, I used it to slice a raw beetroot paper thin without any effort at all. Looks lovely in the block too that hammered finish is really smart.
Really impressed with this knife. The mirror polish on the edge is beautiful and it arrived super sharp out the box. Used it to break down a whole chicken and it was a breeze, even getting through the joints cleanly. Also came in a nice presentation box which was a bonus.
Got this for myself after seeing it online and its brilliant. Cuts through onions with no tears and makes quick work of a butternut squash. The handle is really comfortable too, feels great for extended chopping sessions. Cant fault it for the money.
