From its striking hammered finish to the rich, polished tones of its handle, every detail is crafted to inspire confidence and elevate your cooking ritual.
Exquisite Blade Craftsmanship
The razor-sharp edge is hand-finished to a mirror polish and honed to a precise 8–12° angle, delivering scalpel-like precision for everything from fine vegetable work to carving meats. The subtle hammered texture not only adds visual drama but also reduces food adhesion, allowing ingredients to release effortlessly with each slice.
Mkuruti Wood Handle Elegance
The handle is crafted from richly grained Mkuruti wood, prized for its natural depth of color and distinctive marbling. Its warm, smooth surface offers a secure, comfortable grip, while the faceted profile provides excellent balance and control for precise, confident movements whether slicing fish for sashimi or carving a roast.

Created through a careful blend of time-honored hand-finishing and modern techniques, the Yubetsu embodies the exacting standards of professional cutlery. Its poised weight and perfect balance turn everyday chopping into an art form, making every meal preparation a rewarding experience.

SaleStep 1, Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher, the harsh detergents and jostling will damage the edge and handle.
Step 2, Dry
Towel dry immediately. Don't leave it wet or in the sink, even stainless steel can develop spots if left damp.
Step 3, Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer, it dulls the edge and is a safety hazard.
That's it, no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Really pleased with this kiritsuke, came razor sharp out the box and the hammered finish looks lovely. Used it to slice up a pork loin and it went through like butter. Only slight niggle is the handle feels a bit slim in my hand compared to my old chef's knife, but thats just personal preference. Still a cracking knife for the money.
Lovely knife, sharp as anything and the finish is gorgeous. Took me a couple of uses to get used to the longer blade but once I did it was fine. Wish they did a 10 inch version as well. No complaints otherwise.
Got this after my old chef's knife finally gave up. Honestly cant believe how sharp it is out the box. Used it to prep a roast dinner on sunday - sliced the beef like butter and the flat profile made chopping veg a doddle. The hammered finish looks even better in person and the handle feels proper quality. Arrived next day too which was a bonus. Buzzing with it.
Absolutely made up with this knife. The kiritsuke shape is so versatile, I've used it for everything from fine julienne carrots to carving a roast chicken and it hasn't missed a beat. The hammered finish is proper stunning in real life and food doesn't stick to the blade which is a nice touch. Came well packaged too, arrived next day. Massive upgrade from my old supermarket knife.
Really sharp out the box, used it for prepping veg for a big Sunday roast and it breezed through everything. The flat profile takes a little getting used to if you're coming from a German knife but once you adjust it's lovely. Only complaint is the handle feels a touch slim for my hands, wish it was a bit chunkier. Still, for fifty five quid it's a good buy.
Bought this for myself as a treat. The blade is brilliant, razor sharp out the box and the hammered finish looks proper smart. Only thing letting it down is the handle feels a bit cheap and smooth compared to the rest of the knife - would've preferred something with a bit more grip. Still, it's done everything I've thrown at it so far, from fine slicing veg to carving a roast chicken, so can't complain too much for the price.
Really solid blade for the price. Edge out the box was decent but I touched it up on a strop and its singing now. Profile is dead handy for push cutting veg. Only thing is the handle feels a bit chunky in me hands, took a few days to adjust. Still, no regrets—would buy again.
Absolutely chuffed with this knife. Had it a couple weeks now and its still razor sharp. Used it for everything—slicing beef for stir fry, dicing spuds, even went through a butternut squash like butter. The hammered finish is a nice touch, stops stuff sticking. Proper good value for the money tbh.
Had my eye on this for a while and finally treated myself. Cant believe how nice it is for the price—the hammered finish is gorgeous and stops veg sticking which is a nice touch. Used it to prep a sunday roast and it went through carrots, spuds and a joint of beef without any effort, proper razor sharp out the box. Handle feels solid, bit heavier than my old santoku but I actually prefer the balance now. Delivery was fast and it came in a fancy box, looks lovely on my knife rack.
Got this for myself after eyeing it for a while. The edge on this thing is mental, went through an onion like butter. Love the hammered finish too, looks proper smart in the kitchen. Not too heavy either which I was worried about. Cheers!
