Kagerou 8" Kiritsuke Knife 切り付け包丁
The Kagerou, named after the shimmering “heat haze” of midsummer, brings the grace of fine Japanese-inspired design to your own kitchen. Every detail of this 8-inch Kiritsuke is crafted to make you feel like a professional chef while you cook at home.
3-Layer AUS10 Steel Core
A high-performance AUS10 steel core is wrapped in three protective layers of stainless steel, combining superb hardness with lasting edge retention and corrosion resistance. Honed by hand to a mirror polish and sharpened to a precise 8–12° angle, the blade delivers scalpel-like precision that glides effortlessly through vegetables, meat, and fish.
Striking Hammered Finish
The dark, hand-hammered texture across the upper blade is as functional as it is beautiful. It breaks the surface tension between steel and ingredients so food releases cleanly, keeping every slice smooth and controlled.
Premium Olivewood Handle
Crafted from golden olivewood, the octagonal handle offers natural warmth and a subtle grain that makes each piece unique. Its ergonomic shaping and perfect balance give you a comfortable, secure grip for long prep sessions without fatigue.

Sold OutStep 1 — Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher — the harsh detergents and jostling will damage the edge and handle.
Step 2 — Dry
Towel dry immediately. Don't leave it wet or in the sink — even stainless steel can develop spots if left damp.
Step 3 — Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer — it dulls the edge and is a safety hazard.
That's it — no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Very good knife overall, really sharp and looks smart. Only thing is I expected it to be a bit lighter, it's got a nice weight to it but took a couple of uses to get used to. Handles great for chopping though. Would recommend if you don't mind a slightly heavier blade.
Got this as a present for my dad and he likes it a lot. Says it's sharp and well balanced. He mentioned it's slightly heavier than his old one, but he's getting on with it fine. The packaging was nice and it arrived quickly. Good value for what you get.
It's alright, I suppose. Does what it says on the tin but I wasn't blown away. The blade is sharp but I've had sharper knives for less money. The handle is comfortable enough. Not bad, just not amazing. Might use it as a spare, but I'll stick with my main one for now.
Ok so I've had this knife for about a month now and I'm still amazed every time I use it. It makes quick work of onions, no more crying. The handle feels really nice in the hand, good balance. Massive upgrade from my old set. Came in a nice box too.
Bought this on a whim and it's genuinely the sharpest knife I've ever owned. Sliced through a butternut squash like it was nothing. The handle is comfortable and the blade has a lovely look to it. Arrived next day too which was a bonus. Well happy.
Got this for myself as a treat and I'm dead pleased. Its light but feels solid, the blade is beautiful. I've used it for everything from chopping veg to slicing a roast chicken. The packaging was lovely too, came in a presentation box. Definitely buying more from this shop.
Bought this for my wife as a birthday present and she hasn't stopped raving about it. Says it's the best knife she's ever used, and she's a proper home cook. The edge is so sharp out the box, I cut myself just looking at it. Well worth the money.
Honestly, I was a bit sceptical at first because you never know with kitchen knives online, but this thing is incredible. Used it to prep veg for a Sunday roast and it sliced through tomatoes like they were butter. The mirror finish is gorgeous too. Really chuffed with this purchase.
Good knife for the money, sharp out the box and the steel seems decent. I wish it came in a 9 or 10 inch version as I've got big hands, but the 8 inch is fine for most tasks. Does the job well, just a personal size thing. Really pleased with the purchase otherwise.
I do a lot of cooking and was looking for a decent kiritsuke without spending a fortune. This one fits the bill perfectly. The flat profile is great for push cuts, and the tip is really precise for detail work. Hand washed it every time and it's still like new. Highly recommend.
