Anano 8.5" 3-Layer AUS10 Steel Kiritsuke Knife 切り付け包丁
The Anano 8.5" Kiritsuke Knife is a statement of modern craftsmanship, designed to inspire confidence and deliver professional-level performance in every kitchen.
3-Layer AUS10 Core Strength
At its heart lies a resilient AUS10 steel core clad in three layers of stainless steel for exceptional durability and edge retention. This construction balances razor-sharp precision with the toughness needed for everyday culinary demands, ensuring a blade that stays keen through countless preparations.
Striking Hammered Finish
The blade’s hand-hammered surface is more than beautiful; the subtle texture reduces drag and helps ingredients release cleanly as you cut. The dark, organic patterning creates a unique visual character, giving every knife its own signature look.
Mkuruti Wood Handle Elegance
The handle is crafted from richly grained Mkuruti wood, prized for its natural depth of color and distinctive marbling. Its warm, smooth surface offers a secure, comfortable grip, while the faceted profile provides excellent balance and control for precise, confident movements whether slicing fish for sashimi or carving a roast.
Effortless Precision, Chef-Level Control
Honed to a fine edge, the Anano glides through vegetables, meats, and delicate herbs with minimal effort. Perfect weight distribution and an ergonomic design make it feel like an extension of your hand, turning everyday cooking into a masterful experience.

Sold OutLove the look of this knife, the hammered finish is proper nice. Cuts like a dream. I do wish they did it in a slightly longer version, maybe a 9.5 or 10 inch, as I've got big hands. But for the money, it's a cracking bit of kit. Arrived next day which was a bonus.
Really nice knife, feels quality in the hand and the blade is super sharp. My only thing is the handle shape, it's a bit more oval than I'm used to so took a day or two to get comfortable with. That said, I'm used to it now and it's my go-to for most jobs. Great value.
Really sharp and well made. I find myself reaching for it most days. Only thing is I think I'd prefer a wa handle over this western style one, just personal preference. Still a top knife.
Got this as a present for my husband who loves to cook. He's over the moon with it, says it's a massive step up from his old supermarket knives. The hammered finish looks really smart and he says it holds its edge really well. He's been showing it off to everyone!
Lovely knife, does the job perfectly. The hammered finish is nice but does seem to attract little bits of food more than my smoother blades. Small thing really, still very happy.
Bought this for my dad and he loves it. He said the edge retention is great. He did mention the blade is a tiny bit thicker behind the edge than his other Japanese knife, so it doesn't quite fall through food the same, but he still uses it all the time.
Lovely knife. Came really well packaged. The finish is beautiful and it's just a pleasure to hold and use. My new favourite in the kitchen.
Got this as a birthday present for my husband and he absolutely loves it. The hammered finish looks amazing and he says its the sharpest knife he's ever used. Came in a nice box too.
Great knife for the price. The AUS10 steel seems to hold an edge really well, I've not had to sharpen it yet after a month of daily use. It is a bit heavier than I expected, but not in a bad way, just different. Makes quick work of onions and peppers. Would recommend.
So I've been using this for a couple of weeks now and it's honestly brilliant. The edge is ridiculously sharp, makes prepping veg a total breeze. I was a bit nervous about the shape but it's actually really versatile, used it on everything from herbs to a joint of beef. Handle feels solid too. Came in a nice box, no complaints at all.
Great value for money. Feels much more expensive than it is. The three layer construction gives it a nice heft without being too heavy.
My first proper Japanese knife and I'm converted. The difference in feel and performance is night and day. It just glides through food.
Excellent knife for the price. Cuts beautifully. I just found the balance point is a bit further forward than I'm used to, so it took a meal or two to adjust my technique. Now it's fine.
Sharp, sturdy, and looks the part. Does exactly what you'd want a knife like this to do. No complaints at all.
Massive upgrade from my old supermarket set. The weight and balance is spot on, feels like a proper professional tool. Used it to break down a whole chicken and it handled everything brilliantly.
Cant believe how sharp it is out the box. Sliced some salmon for sashimi and it was perfect, no tearing at all. Arrived next day which was a bonus.
Great performer, slices through everything nicely. My minor gripe is I wish it came in a slightly longer version, maybe a 10 inch, for bigger jobs. But for most tasks it's brilliant.
Very good knife, super sharp. It's slightly heavier than I expected but I actually prefer it now I've used it a bit. Makes chopping feel more controlled.
Love this knife. The AUS10 steel holds an edge for ages, I've not had to sharpen it yet after weeks of daily use. Handle is comfortable even for longer sessions.
Been using this as my main knife for a few weeks now. The kiritsuke tip is great for precise work, and the flat part of the blade is ideal for chopping herbs. Really impressed.
Really like this knife, the edge is fantastic. Only reason it's not 5 stars is the handle shape took a little getting used to for me, it's a bit more oval than I'm used to. Still a great bit of kit though.
Ok so I was a bit nervous about the price but it's completely worth it. This knife is a workhorse, I use it for everything from garlic to butternut squash.
Used it to prep a sunday roast, did all the veg and carved the beef. Performed flawlessly, didn't need to reach for any other knife. Very happy.
Brilliant knife, exactly what I needed. The edge is incredible, goes through tomatoes like they're not even there. Feels really solid in the hand.
The handle has a nice shape, fits my hand really well. Knife is super sharp and the edge retention seems excellent so far.
