Shimanto 8" Damascus Steel Bread Knife パン切りナイフ
The Shimanto 8" Damascus Steel Bread Knife combines striking design with professional-grade performance to create an essential tool for every discerning kitchen. From its rippling Damascus blade to its artfully crafted handle, every detail reflects refinement and strength.
67-Layer VG10 Damascus Excellence
At the core of the Shimanto lies a premium Japanese VG10 steel core, clad in 33 layers of Damascus steel on each side. This 67-layer construction, hardened to HRC 62, delivers exceptional edge retention and long-lasting sharpness. The finely serrated 15° edge glides through crusty loaves and delicate pastries alike, ensuring clean, effortless slices every time.
Resin and Hardwood Handle
The handle is a distinctive blend of shimmering resin and richly figured hardwood, creating a unique marbled pattern in every piece. Waterproof, antibacterial, heat-resistant and non-slip, it provides a firm yet comfortable grip, even during long baking sessions.
Elegant Craftsmanship and Lasting Performance
Ergonomically shaped in a modern oval profile, the handle balances perfectly with the blade’s weight, allowing smooth, controlled movements. Built to meet professional standards, the Shimanto is designed to retain its performance and beauty for years, making it the only bread knife you will ever need.
The handle is waterproof, antibacterial, heat-resistant, and non-slip; it confers a firm yet comfortable grip to make your cutting, dicing, slicing, chopping as effortless as possible.

Not sure which knife?
Answer a few quick questions about how you cook, and we'll match you with the perfect blade.

Step 1, Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher, the harsh detergents and jostling will damage the edge and handle.
Step 2, Dry
Towel dry immediately. Don't leave it wet or in the sink, even stainless steel can develop spots if left damp.
Step 3, Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer, it dulls the edge and is a safety hazard.
That's it, no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Got this for me birthday from the missus. Cuts through crusty sourdough like nobodys business, lovely clean slices and the pattern on the blade looks dead smart. Only thing is its a bit heavier than me old bread knife so took a couple goes to get used to the feel. Still, would happily recommend to anyone after a proper bread knife.
Used this on a proper sourdough loaf this morning and it went through the crust like butter. The blade feels substantial but not too heavy and the serrations are spot on, no tearing or squashing the bread. Bit of a step up from my old supermarket bread knife that's for sure, pretty sure I'll be using this for years.
Got this to replace my old bread knife that was past it. Looks gorgeous with the damascus pattern, and it goes through crusty sourdough no problem without squashing the loaf. Only slight gripe is it's a bit heavier than I'm used to, but I'm getting there. Came nicely boxed too.
Nice knife. Serrations are fine enough that it doesn't tear the bread to bits, used it on a fresh bloomer and some baguettes and it sliced clean. The handle shape took me a couple days to get used to, and I do wish it came in a longer size for bigger loaves, but for the price I'm not complaining.
Bought this for my wife who bakes a lot of sourdough and shes over the moon. Slices through crusty loaves clean without tearing or crushing the bread. The damascus finish looks brilliant and it feels well balanced. Arrived next day nicely packaged.
Its a decent knife and looks nice enough but I'm not sure its £70 nice. Cuts bread fine, no complaints there, but my old £15 one did pretty much the same job. The handle is comfy and the blade is pretty but I cant say it feels massively different to use. Maybe I expected a bit more for the money.
Got this for me dad's birthday and he's over the moon. Cuts through crusty sourdough without squashing it, which was his big moan with the old one. The Damascus pattern looks proper smart on the worktop too. I was half expecting it to be a bit flimsy for the price but its solid. Came next day which was a bonus.
Really nice bread knife, glides through fresh loaves no trouble. Serrations are more fine than what I'm used to but they work a treat. Only thing is its a tad heavier than my old Victorinox, took a few slices to get the feel of it. Still, for under £70 its a decent bit of kit.
Got this for my wife's birthday and she's absolutely made up with it. The blade looks stunning, that Damascus pattern is proper gorgeous. She bakes a lot of sourdough so this gets used loads, slices through crusty loaves like they're butter without squashing the bread. Even works a treat on soft white bloomers which is always the tricky bit. Came in a lovely box too, felt quite posh.
So my old bread knife was a cheap one from Tesco that I'd had for years and I finally thought I'd treat meself. Blimey what a difference. Cuts like a dream, just glides through. The handle feels really comfortable and the weight is spot on. Only used it a few times so far but can tell its quality. Proper bit of kit.
