The Tokachi 8" Damascus Steel Bread Knife combines striking design with professional-grade performance to create an essential tool for every discerning kitchen. From its rippling Damascus blade to its artfully crafted handle, every detail reflects refinement and strength.
67-Layer VG10 Damascus Excellence
At the core of the Tokachi lies a premium Japanese VG10 steel core, clad in 33 layers of Damascus steel on each side. This 67-layer construction, hardened to HRC 62, delivers exceptional edge retention and long-lasting sharpness. The finely serrated 15° edge glides through crusty loaves and delicate pastries alike, ensuring clean, effortless slices every time.
Resin and Hardwood Handle
The handle is a distinctive blend of shimmering resin and richly figured hardwood, creating a unique marbled pattern in every piece. Waterproof, antibacterial, heat-resistant and non-slip, it provides a firm yet comfortable grip, even during long baking sessions.
Elegant Craftsmanship and Lasting Performance
Ergonomically shaped in a modern oval profile, the handle balances perfectly with the blade’s weight, allowing smooth, controlled movements. Built to meet professional standards, the Tokachi is designed to retain its performance and beauty for years, making it the only bread knife you will ever need.

Step 1 — Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher — the harsh detergents and jostling will damage the edge and handle.
Step 2 — Dry
Towel dry immediately. Don't leave it wet or in the sink — even stainless steel can develop spots if left damp.
Step 3 — Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer — it dulls the edge and is a safety hazard.
That's it — no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Really nice knife, very sharp out the box and the damascus pattern is lovely. Only small thing is the handle feels slightly thicker than I expected, took a bit of getting used to. But after a week Ive adjusted and it slices beautifully. Wish it came in a longer length actually but thats just me.
Bought this as a birthday present for the wife, shes well into her baking. She says its brilliant—makes slicing her homemade loaves so much easier. Arrived next day which was a bonus, and the box looked nice enough to gift. Shes already asked me to get a couple more from the range.
Great knife for the money. The edge is exceptional and it looks the part. I just wish the handle had a bit more curve or contouring—its a bit straight for my liking but still comfortable enough. Minor thing really, would recommend.
Brilliant knife. Cuts through everything Ive thrown at it without tearing or squashing. The handle is comfortable, the weight is just right—not too heavy, not too light. Came really well packaged too. Top notch.
Ok so I was a bit skeptical about spending sixty quid on a bread knife but Im glad I did. The blade is beautifully balanced, the edge retention seems spot on after a month of daily use. Also looks dead smart on the magnetic strip. Would buy again in a heartbeat.
Bought for my dad as he was moaning about his old knives. He reckons its a massive step up and loves the sharpness. Only gave it four stars because he said the handle shape isnt his favourite, he prefers a rounder grip. But for the price its a solid buy.
Got this for myself after weeks of umming and ahhing. Honestly, its the best bread knife Ive ever owned. Cuts through a crusty sourdough like butter, no crushing at all. The handle feels lovely in the hand too. Proper chuffed with it.
Massive upgrade from the cheapo supermarket knife I was using before. This thing is sharp as anything, and the damascus pattern is stunning. Ive used it on crusty rolls, a massive loaf, even sliced a tomato with it to see—clean cuts. Cant believe how good it is.
Im impressed overall. It makes quick work of crusty bread and even works fine on softer loaves without crushing. My only gripe is its a tad heavier than my old bread knife, but Im sure I'll get used to it. Good quality build, feels solid.
Alright. Does what its meant to. Handle is comfortable. I dont know, maybe my expectations were too high from reading the other reviews. Its good, not great. Gets used.
