A Sharpening Studio in the Palm of Your Hand
This is the most complete sharpening set in the Shimeru line. The Multi-Surface Rolling Sharpener combines the power of diamond and ceramic into a four-stage sharpening solution: #240 and #600 ceramic, and #400 and #1000 diamond plates.
Why This Combo?
#240 Ceramic: Aggressively reshapes damaged or heavily dulled knives.
#600 Ceramic: Smooths out rough edges and sets up the blade for refinement.
#400 Diamond: Durable grit for edge rebuilding on tougher steels.
#1000 Diamond: Ultra-fine edge finishing for clean, precise cuts.
How to Use:
Follow a progressive grit sequence based on your blade’s condition. Use ceramics for softer steel and diamond plates for harder steel or fast results. The built-in magnetic block offers two sharpening angles (15° & 20°), and the roller guarantees consistent contact and pressure.
Perfect For:
Mixed steel blades, from carbon to powder steels
Full edge repair to final polish in one compact system
Professional chefs who want every grit option at their fingertips
Crafted from professional-grade, heat-treated high-carbon steel, Shimeru Knives deliver exceptional sharpness, durability, and edge retention. From the first slice, you’ll experience the precision that sets us apart.
Our knives are guaranteed to be the sharpest you’ve ever owned. No exceptions, no compromises—just razor-sharp blades that elevate your culinary experience.
Shimeru Knives feature uniquely designed handles that not only add a sophisticated touch to your kitchen but also provide a comfortable, secure grip for effortless chopping and slicing.
With a double-bevel edge sharpened to 15°—compared to the standard 20-25° of most Western knives—our blades allow for smoother, faster cuts, enhancing your cooking efficiency by 2 to 3 times.

Mixed feelings. It sharpens knives well enough, the build is solid. But for the price, I dunno, I guess I was expecting to be blown away and I'm not. It's good, not great.
Bought this as a present to myself after getting a proper nakiri. Was worried about ruining the edge but the rolling action is so smooth and controlled. The different grits are spot on, the 400 diamond is perfect for a quick touch-up. Knives are sharper than when they arrived now.
Bought this after getting my first proper Japanese knife. Was terrified of ruining it on a stone. This takes all the guesswork out, the edge it gives is superb.
Massive upgrade from the little pull-through sharpener I had. This actually works. Used it on my gyuto that had a few nicks, the coarse ceramic sorted it right out. The instructions were clear, took me about 10 mins to get a proper edge back. Well worth the money.
It's alright. Does sharpen the knives, I'll give it that. Just expected a bit more for a hundred quid. The finish is good but not quite the mirror edge I get from my water stone. It's convenient though.
Been using it for a few weeks now on all our knives. The four stages make sense, you can really feel the progression. My favourite bit is the 1000 diamond stone, gives such a clean, polished edge. Its compact, stores away easy. Just a great bit of gear.
Bought this to maintain my collection. It's excellent, but I do wish it came with some sort of simple angle guide for complete beginners. Figured it out though, and my knives are razor sharp.
Got this for my husband whos obsessed with his Japanese knives. He loves it, says its a proper bit of kit. The build feels really solid, not cheap plastic. He showed me the difference on my old veg knife and I cant believe how sharp it got. Came really well packaged too.
Ok so I was a bit nervous about sharpening my own knives but this thing is dead easy to use. The magnets hold the blade solid, no wobble at all. My santoku was basically blunt and after using the 240 and 600 stones it was already miles better, the 1000 finish is just brilliant. Makes slicing tomatoes a dream now.
Birthday present for the wife who loves cooking. She was chuffed. Said its much easier than the whetstone she was struggling with. Results are great.
Decent product. Easy to use and it works. Not sure it's that much better than my old two-stage ceramic rod to be honest, just more expensive. Does the job fine.
Finally a sharpener that actually works. My knives were so dull, the 240 stage was needed. Now they're sharper than when I bought them. Easy to use.
Got this for my husband who's obsessed with his knives. He's over the moon with it. Says its the easiest way he's found to get a proper edge back on his gyuto. Came really well packaged too.
Makes sharpening less of a chore. I use the 600 and 1000 every couple of weeks to keep my main chef's knife in top shape. Cuts through butternut squash like butter now.
This has revived all my kitchen knives. The process is simple and effective. I suppose I expected it to be a bit quicker? But then a proper edge takes time. It's a quality tool.
Really good sharpener, does exactly what it says. My only minor gripe is I wish the base was a bit heavier or had some non-slip feet, it can slide a tiny bit if you're not careful. Still, the edges it produces are fantastic.
It's fine. Gets a decent edge on. I found the instructions a bit vague for a total novice like me. Ended up watching a video online. Does what it says, but the hype had me expecting more.
Cant believe how easy it is. Followed the instructions, did the full four stages on my old Global. Its like a different knife. Cuts paper thin slices of salmon now.
Works brilliantly on my German knives. For my thinner Japanese ones it's great too but you have to be a bit more gentle on the coarser grits. Took a little practice. Overall very happy with it.
A really clever bit of kit. Does a superb job. My slight niggle is that it's a bit bulkier to store than I imagined. But that's a small price to pay for the results. Beats paying someone to sharpen them.
Was a bit pricey but honestly its worth it. Its like having a little sharpening studio on your counter. The 240 grit sorted out a chip in my nakiri no problem.
I’ve never used a knife that performs this well. It’s made cooking so much more enjoyable.
Ok so it works. My knives are definitely sharper. But the process feels a bit fiddly, constantly switching between the four sides. It's effective, but I don't find it as quick or enjoyable as I hoped.
So I've been using this sharpener for a few weeks now on my Japanese knives. Honestly its a game changer, the results are fantastic. My santoku glides through tomatoes now, no effort at all. Build quality feels solid, the magnetic bit is clever.
Great results, no doubt. The edge is proper sharp. I just find the handle shape a bit awkward for my big hands, but that's just me being picky. Would still recommend.
