Masterfully forged from professional-grade High-Carbon Steel, the Kitakami Collection features individually forged kitchen knives that are built to last so that you never need another kitchen knife set again.
High-Carbon Steel, which was once the metal of choice of Japanese swordsmiths, has been exploding in popularity due to its added hardiness and sharpness, to such a degree that high-carbon steel has become the premier choice of many professional chefs.
Each Kitakami knife is carefully heat-treated and sharpened to perfection for razor-sharp cutting and extreme durability. The knives are etched with a traditional Damascus pattern, paying homage to a style of knife-making whose history stretches back over 1000 years.
The knives boast a 15° edge for superior cutting, as compared to a typical 20-25° edge found in most Western knives. You WILL feel the difference from the very first cut.
Crafted from professional-grade, heat-treated high-carbon steel, Shimeru Knives deliver exceptional sharpness, durability, and edge retention. From the first slice, you’ll experience the precision that sets us apart.
Our knives are guaranteed to be the sharpest you’ve ever owned. No exceptions, no compromises. Just razor-sharp blades that elevate your culinary experience.
Shimeru Knives feature uniquely designed handles that not only add a sophisticated touch to your kitchen but also provide a comfortable, secure grip for effortless chopping and slicing.
With a double-bevel edge sharpened to 15° (compared to the standard 20-25° of most Western knives), our blades allow for smoother, faster cuts, enhancing your cooking efficiency by 2 to 3 times.

Step 1, Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher, the harsh detergents and jostling will damage the edge and handle.
Step 2, Dry
Towel dry immediately. Don't leave it wet or in the sink, even stainless steel can develop spots if left damp.
Step 3, Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer, it dulls the edge and is a safety hazard.
That's it, no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Got this set for my birthday off the missus and honestly proper chuffed with them. The marble handles look dead smart, not too heavy in the hand. I’ve used the santoku most days now for veg and the nakiri’s brill for cabbage and that. The bread knife went through a crusty sourdough no bother. Was a bit worried they’d be all show and no good but they’ve kept their edge well so far. Even the petty’s getting a lot of use for small jobs. Nice solid set for a home cook, feels a step up from the old block we had.
good set for the price, covers just about everything I need in the kitchen. the kiritsuke is my favourite, slices meat really clean. The handles are nice to look at, the green marble effect is lush, but I did find them a touch slippery when my hands are wet—wish they had a bit more grip or maybe a different texture. Not a dealbreaker like, just takes a bit of getting used to. My partner keeps nicking the petty for chopping herbs. overall decent value.
Upgraded from my old supermarket set and the difference is mental. The nakiri is my go to now for veg, chops through cabbage and onions with zero effort. The 7" santoku's also banging for meat. Handles took a day to get used to cos they're thicker than my last ones but now they feel proper, stop my hand cramping up when I'm prepping for a roast. Really chuffed for the price, looks way dearer than what I paid.
Got this set for the missus as she's been wanting proper knives for ages. The green marble handles are dead pretty and feel solid in hand. The bread knife is a beast, goes through crusty sourdough like butter. She proper loves the little petty one for strawberries and grapefruit and that. Came in a right nice box too, proper presentable.
So i bought this set mainly for the Kiritsuke and the smaller Petty and they havent disappointed. The damascus pattern looks mint and ive been using them for a good month now, still sharp as the day they arrived. Handles are comfy despite looking a bit fancy and they've got a nice weight to em. Big upgrade from my old IKEA knives. Whole set covers pretty much anything I need in the kitchen, the only thing I don't use much is the boning knife but thats just me. For £145 this lot is a steal.
got this set for me and the missus after our old supermarket knives finally gave up. The green marble handles look even better in person, proper eye catching and feel solid in the hand. I use the Santoku most days for veg and it glides through onions like butter, the bread knife is a beast on crusty loaves as well. The nakiri has quickly become my favourite for any kind of veg prep and the filleting knife made light work of some trout last weekend. Honestly for 8 knives at this price I werent expecting much but they've proper impressed me. Came in a nice box too, would make a cracking wedding gift.
ive been using these daily for a few weeks. the petty knife is a little ripper for small tasks like peeling ginger, really handy. the set covers all the bases. my only slight criticism is the edge retention is okay but not amazing, i feel like i need to hone the santoku more often than id like. but a quick hone sorts it right out. for the price i think its fair. would buy again
been cooking for 30 years and these are a solid set for the money. the blades hold an edge well and the damascus pattern is really pretty. the handles are a bit smooth for my liking, could do with a bit more texture when your hands are wet. but i just grip a bit tighter and its no problem. the kiritsuke is a lovely knife, havent seen one in a set before. happy with the purchase
solid set, no complaints really. the damascus pattern makes them look premium. i do think the knife block is a bit bulky for my small kitchen but the knives themselves are great. i use the santoku the most, its got a nice weight. my missus prefers the nakiri. only took off a star because i wish theyd make this set with black handles as an option, the green marble is unique but not for everyone. still happy
absolutely chuffed with these knives. used the bread knife yesterday and it sliced through a crusty sourdough like butter. the whole set looks stunning on the counter, that marble green handle is really something. proper sharp out the box too. bargain for 140 quid
