Masterfully forged from professional-grade High-Carbon Steel, the Kitakami Collection features individually forged kitchen knives that are built to last so that you never need another kitchen knife set again.
High-Carbon Steel, which was once the metal of choice of Japanese swordsmiths, has been exploding in popularity due to its added hardiness and sharpness, to such a degree that high-carbon steel has become the premier choice of many professional chefs.
Each Kitakami knife is carefully heat-treated and sharpened to perfection for razor-sharp cutting and extreme durability. The knives are etched with a traditional Damascus pattern, paying homage to a style of knife-making whose history stretches back over 1000 years.
The knives boast a 15° edge for superior cutting, as compared to a typical 20-25° edge found in most Western knives. You WILL feel the difference from the very first cut.
Crafted from professional-grade, heat-treated high-carbon steel, Shimeru Knives deliver exceptional sharpness, durability, and edge retention. From the first slice, you’ll experience the precision that sets us apart.
Our knives are guaranteed to be the sharpest you’ve ever owned. No exceptions, no compromises. Just razor-sharp blades that elevate your culinary experience.
Shimeru Knives feature uniquely designed handles that not only add a sophisticated touch to your kitchen but also provide a comfortable, secure grip for effortless chopping and slicing.
With a double-bevel edge sharpened to 15° (compared to the standard 20-25° of most Western knives), our blades allow for smoother, faster cuts, enhancing your cooking efficiency by 2 to 3 times.

Step 1, Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher, the harsh detergents and jostling will damage the edge and handle.
Step 2, Dry
Towel dry immediately. Don't leave it wet or in the sink, even stainless steel can develop spots if left damp.
Step 3, Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer, it dulls the edge and is a safety hazard.
That's it, no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Got this set as a birthday present from the missus and honestly pretty impressed for the price. The green marble handles look even better in person, really unusual. Been using the santoku the most for general veg prep, the nakiri is proper for cabbages and such. The bread knife glides through sourdough no bother. Only gripe is the kiritsuke feels a bit long for my small kitchen, but that's on me not the set. Would recommend as a starter set.
Really solid set for the money, covers everything I need in a kitchen. Use the petty and the 5 inch santoku most days, they're a nice weight and the edge out of the box was decent. Only slight gripe is the handles are a bit chunkier than I'm used to, took me a good few days to adjust my grip properly. Once I got the hang of it though they're comfortable enough. Would happily recommend if you want a full set without spending daft money on individual knives.
Got this set for my husbands birthday and he's properly chuffed. We've been using them daily for about a month now and they've held up really well. The santoku is the workhorse in our kitchen, makes quick work of onions and carrots, and the nakiri is brilliant for anything leafy or for making slaw. Bread knife glides through a crusty sourdough without tearing it to bits. The kiritsuke we've only used a couple times on a roast but left a lovely clean slice. Handles look even better in real life, that green marble effect is quite smart and they feel solid in the hand, not slippy. Came in a nice presentation box so wrapping it up was easy. All round a proper upgrade from the mismatched lot we had before.
Got this set for my birthday from the missus and honestly cant fault it. The handles are gorgeous, proper statement on the counter. I use the 7 inch santoku for nearly everything, its stupid sharp out the box. The bread knife is fantastic too, no squashing the loaf. Even the little petty knife gets used most days for fruit and small jobs. Was a bit worried a set at this price would be style over substance but they hold an edge well. The block looks smart on the worktop. Came really well packaged too.
Really pleased with these overall. The santoku and nakiri are the ones I reach for, lovely weight and balance. The handles are different to what I'm used to, bit thicker than my old set so took a few days but I've got used to them now. Only wish the set came with a proper paring knife instead of the little 3.5 inch one, but suppose thats me being picky. Good value for what you get, the wife loves the green marble effect.
Bought this set for the wife's birthday and she's dead chuffed with them. The green marble handles look really smart in our kitchen, and all the knives came sharp. She uses the smaller santoku most, and the bread knife actually cuts without tearing. Only small complaint is the kiritsuke feels a bit weighty for her, so she tends to leave it and use the 7 inch santoku instead. Still, for the money you get a lot, and the set covers pretty much everything.
Got this set as a birthday treat to myself and honestly so glad I did. The knives are all properly sharp out the box, the green handles look even better in person than the photos. I've been using the 7 inch Santoku for most daily prep, and the nakiri is brilliant for veg, makes light work of cabbage and carrots. The bread knife went through a sourdough loaf with zero squashing. My old Tesco set was rubbish compared to these. Only thing is now I want to cook more just to use them.
Got this set for my birthday and honestly wasnt expecting this level of quality for the price. The handles are a gorgeous green marble, feels proper solid in the hand. Been using the santoku for most things and the nakiri is a dream for veg prep. They arrived sharp enough to shave with, proper well balanced. The bread knife is the real surprise, cuts through crusty sourdough like butter and no tearing. The kiritsuke is a bit flash for everyday but makes a cracking carving knife for a roast. Only tiny gripe is the petty knife could be a touch longer but thats just me being fussy. All round a brilliant set that looks the part on the magnetic strip. Way better than my old set that cost twice as much.
Really happy with these knives so far. The green handles looked a bit odd online but in person theyre quite nice, got a good weight to them. I use the 7-inch santoku the most, its been brilliant for veg prep. The bread knife is proper sharp as well, glides through sourdough no bother. Only small niggle is I wish the handles were a bit slimmer, find them a touch chunky for my small hands. Still a solid set for the price though, definitely recommend if youre looking for a full kit to start with.
Got this set for my birthday off the missus and honestly proper chuffed with them. The marble handles look dead smart, not too heavy in the hand. I’ve used the santoku most days now for veg and the nakiri’s brill for cabbage and that. The bread knife went through a crusty sourdough no bother. Was a bit worried they’d be all show and no good but they’ve kept their edge well so far. Even the petty’s getting a lot of use for small jobs. Nice solid set for a home cook, feels a step up from the old block we had.
