The Kakehashi features a stunning blade crafted from vacuum heat-treated AUS10 stainless steel, offering exceptional sharpness, edge retention and durability. This high-performance steel ensures the blade remains keen through extensive use, while the finely honed edge delivers effortless slicing, mincing and chopping of everything from delicate vegetables to hearty meats, making it perfect for meal prep or intricate plating.

Its robust design ensures it can handle even the toughest ingredients without compromising performance.
Designed for comfort and control, the Kakehashi features an ergonomic olivewood handle that feels natural in your hand. The warm golden grain of the olivewood provides a touch of organic elegance, while the carefully carved profile ensures a secure grip that reduces fatigue, allowing for extended use without discomfort. Sold OutStep 1 — Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher — the harsh detergents and jostling will damage the edge and handle.
Step 2 — Dry
Towel dry immediately. Don't leave it wet or in the sink — even stainless steel can develop spots if left damp.
Step 3 — Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer — it dulls the edge and is a safety hazard.
That's it — no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Really nice knife overall, the edge is fantastic and it feels well balanced. Only thing for me is the handle took a bit of getting used to, it's a bit thinner than what I'm used to. But after a few uses I've adjusted and now it's fine. Good value for the money.
Got this knife after seeing it recommended somewhere and honestly its brilliant. Sharp out the box, lovely balance. Used it for everything this week from onions to a butternut squash, no trouble at all. Feels like a proper bit of kit.
Ok so it's alright. The blade is sharp and it cuts fine but the balance feels a bit off to me. Maybe I'm just used to heavier Western knives but it doesn't feel as natural in my hand. It works for most things but I wouldn't say it's anything special. Good for the occasional cook I suppose.
Bought this as a gift for my dad and he seems really chuffed with it. He said the blade is incredibly sharp but he did mention it feels slightly heavier than his old knife. I think he'll get used to it though, the quality is definitely there. Nice presentation box too.
Great knife for the price point. Its sharp, cuts well, and the steel seems decent. I do wish it came in a longer size though, sometimes I find 8 inch a bit short for larger veg like cabbages. Still, definitely recommend if you want a good all-rounder without spending a fortune.
Best knife I've ever owned, no question. The AUS10 steel holds its edge for ages, been using it daily for about a month and it still glides through tomatoes like butter. Handle feels great in my hand too.
Massive upgrade from my old Victorinox. This gyuto is just so much more comfortable to use, the handle shape is spot on for me. Really sharp edge, makes quick work of prepping veg for a stir fry. Highly recommend.
Cant believe how sharp this knife is! I've had a few Japanese knives before but this one takes the cake. The blade has a lovely weight to it, feels solid but not heavy. Used it to break down a chicken and it was effortless, no issues at all.
So I'd been umming and ahhing about getting a proper gyuto for ages and I'm so glad I went for this one. The stainless steel seems really good quality, no staining after cutting beets or lemons. Feels like it'll last for years. Arrived next day which was a bonus.
Bought this for my husband as a birthday present and he hasn't stopped raving about it. He says its his favourite knife now, cuts everything perfectly and feels really well made. Came nicely boxed too which was a nice touch.
